Chocolate No Bake Pie

This is my new go-to pie recipe when I’m in a hurry and need a yummy party dessert!

My oldest daughter needed a quick chocolate pie to take to an end-of-the-year potluck for her culinary class – but we were waiting on a new stove to be delivered and had no oven to bake anything! So we grabbed a couple boxes of chocolate pudding and a couple pie crusts and whipped up this easy no bake chocolate pie. It was a hit with the class and is now in my permanent dessert rotation!

All you need are four simple ingredients to make it! Then you just mix the filling, add the topping, and chill. It’s about 10 minutes of “work” – the hardest part is honestly waiting for it to be ready to eat!

This chocolate pudding pie is rich, thick, and creamy. It tastes like pure decadence, almost like a combination of chocolate mousse and ice cream cake (we kept our pies in the freezer until serving). One batch makes enough filling for two pie crusts, so it’s the perfect recipe for feeding a crowd at potlucks, holiday dinners, or birthdays.

Hope you love it as much as we did!

Instructions

  1. Make the Base – Add the instant pudding mix and heavy whipping cream to the bowl of a stand mixer. Beat until well combined and mixture starts to thicken.
  2. Fill the Pie Shells – Divide the mixture evenly between the two pie crusts and spread evenly. Chill in freezer for 30 minutes.

  4. Freeze – Chill in the freezer until fully set and ready to serve.

Prep Tips

  • Yield – This recipe makes enough filling for two standard 9-inch pie shells.
  • Pie Crusts – Be sure to use premade pie shells that do not require baking. Graham cracker crusts or a chocolate cookie crust are both tasty choices.
  • Garnish – Dress up your pie with festive sprinkles to match a specific occasion, like Christmas sprinkles during the holiday season. You can also add more chocolate on top like we did! Chocolate shavings, mini chocolate chips, or Oreo cookie crumbles would all be delicious options.
  • Storage – Once the pies are set, they can be kept either in the refrigerator or the freezer. Keep in mind that if you store the pies in the fridge, the whipped topping will be softer. If kept frozen, the pies will have the consistency of ice cream cake.
  • For Easier Slicing – Run a chef’s knife or metal pie cutter under hot water for 45 seconds before slicing and wipe clean after each cut.
