Brown Butter Sea Salt Rice Krispie Treats
These are NOT the boring rice krispie treats that you remember from childhood bake sales!
I can honestly say that these are the BEST rice krispie treats I’ve ever tasted! And yes, I’m a little biased, but I promised they really are THAT good!
Instead of just mixing in regular butter, you brown the butter first so it caramelizes. Then you mix in the marshmallows and rice krispies cereal. This caramelization step only takes a couple extra minutes but it gives the rice krispie treats this incredibly rich and buttery flavor that’s almost like soft caramel candy. And that nutty aroma while they’re cooking is absolutely heavenly!
A sprinkle of sea salt gives this recipe the perfect balance of sweet and salty flavors.
We’ve been making these rice krispie treats for every event or gathering we’ve been invited to for the past few months. At first, people are like…oh rice krispie treats…yay. But as soon as they take a bite you can see their eyes light up and they GET IT.
Brown butter rice krispie treats are SO SO GOOD. They actually do melt in your mouth! And I think they taste even better the next day after you make them.
Now this is one of my husband’s most requested desserts!

Ingredients
- 6 cups crispy rice cereal (such as Rice Krispies cereal)
- (2) 10oz bags of mini marshmallows, reserve 2 cups
- 1/3 cup sweetened condensed milk
- 1/4 teaspoon sea salt (or kosher salt)
- 1 cup butter
- 1 teaspoon vanilla extract

- Medium or Large Saucepan
- 9×13″ baking pan or baking dish
- Parchment Paper
Instructions
To Prep: Line a 9×13โ baking pan with parchment paper. If adding any toppings, layer them in the bottom of your pan now.
- Melt butter in a large pot over medium low heat, stirring occasionally.ย Once butter starts to bubble and foam (about 5 minutes), turn off the heat and allow it to cook with the residual heat for a couple more minutes. You want it to start to caramelize, but not burn.
- Stir in the mini marshmallows (minus 2 cups that youโve set aside) and pour in the condensed milk and vanilla. Once the marshmallows start to melt, remove from the stovetop and fold in the rice krispies. Add the salt and stir in the extra mini marshmallows. They will soften a little but shouldnโt melt all the way.
- Press the marshmallow mixture into your prepared pan, using a spatula or clean hands.
- When the rice krispie treats have completely set, you can cut and serve.
Prep Tips
- Toppings – These brown butter rice krispy treats taste amazing all on their own! However, you can add toppings (like pictured in this post) to customize them for different occasions or add new flavors. For example, we used Christmas colored M&Ms when we made them for a holiday party. Mini chocolate chips work very well too!
- Butter – We used unsalted butter for this recipe, because we are adding salt and that allows us to control the flavor best. However, if all you have at home is salted butter that is totally fine too! You might just want to add a little less sea salt so they are notย too salty.
- Gluten-Free Version – Rice Krispies cereal is not gluten free, even though it is made with rice. For a gluten free version of this recipe, you’ll want to purchase and use a gluten free crispy rice cereal and check labels.
- Storage – Keep rice crispy treats in an airtight container at room temperature for 3-5 days.
