Carrot cake is one of my favorite treats! That soft, spicy cake and luxurious cream cheese icing — I’m drooling just thinking about it!

Now you can enjoy all the flavors of a classic carrot cake, without any baking! These carrot cake rice krispie treats are an awesome no-bake dessert that’s perfect for Easter, or anytime!

Another plus โ€” they are mess-free and handheld! What a fun treat to make for the kids or for a party!

These carrot cake rice krispie squares are made with real carrots and baking spices, so they taste just like the real deal. We even topped them with an easy from-scratch cream cheese frosting!

But what really makes these treats unique is the crunch! They are so tasty and make a unique sweet to try this year!

For the Carrot Cake Rice Krispie Treats:

  • 4 Tablespoons Salted Butter
  • 1 Bag Mini Marshmallows
  • 1 ยฝ teaspoon Cinnamon
  • ยฝ teaspoon Nutmeg
  • 6 Cups Rice Krispies Cereal
  • ยผ Cup Grated Carrots

For the Cream Cheese Icing:

  • 2 oz Cream Cheese โ€”ย Softened
  • 1 Tablespoons Butter โ€” Softened, but not melted
  • 1 Cup Powdered Sugar
  • ยผ teaspoon Vanilla
  • 1/3 cup White Chocolate Chips

Directions

To Make the Carrot Cake Rice Krispie Treats

Line a 9×13 inch baking pan with parchment paper.

Combine butter and marshmallows in a large saucepan over medium-low heat. Stir until melted and smooth.

Remove pan from heat and stir in cinnamon, nutmeg, grated carrots and rice cereal.

Scoop the mixture into your prepared pan and gently press down to evenly fill the pan.

Allow to cool until completely set before cutting.

To Make the Cream Cheese Icing

Cream together softened butter and cream cheese with an electric mixer. Beat in vanilla and powdered sugar until fully incorporated.

Melt the white chocolate chips in a microwave-safe bowl. Heat in 20-30 second increments, stirring between, until melted and smooth.

Pour the melted white chocolate into the cream cheese mixture and beat until combined.

Scoop the icing into a piping bag and drizzle across the full pan of treats, or on individual pieces if you’ve already cut them.

Do Rice Krispie Treats Need to Be Refrigerated?

Normally, no, rice krispie treats do not need to be refrigerated. However, cream cheese frosting does need to be kept in the refrigerator, since it is made with dairy.

If you’ve already frosted the rice krispie treats, place them in a sealed airtight container in the fridge.

If you haven’t frosted them yet, you can keep the rice krispie treats out at room temperature and frost them when you’re ready to serve.

Are Rice Krispie Treats Gluten Free?

Depending on the type of rice cereal used, this can easily be a gluten free dessert. At this time, Rice Krispies brand cereal is made with ingredients that may contain wheat, so it is not technically gluten free. However, you can substitute with a brand of puffed rice cereal that is gluten free if you prefer. Just be sure to read the labels!
