Channel your inner leprechaun and whip up some green magic with this festive St. Patrick’s Day Fluff Salad! This retro inspired lime jello salad recipe is fun and vibrant, light and refreshing, and makes the perfect special touch for any St. Patrick’s Day celebrations.

Light and airy cool whip is blended with marshmallows, pineapple, and lime jello to create a decadent dessert or side dish. Topped with bright rainbow candy and gold sprinkles, this playful salad is sure to charm both kids and adults alike.

Instructions

  1. Add the jello powder and cool whip to a large mixing bowl and stir until fully combined.
  2. Add the marshmallow fluff and cottage cheese. Stir well.
  3. Gently fold in the remaining ingredients (excluding any toppings or garnishes). Take care not to smush the pretty Lucky Charms marshmallows.
  4. To garnish, place in a serving bowl. Position one of the rainbow belts in the middle top of the heap of fluff and surround each end of the rainbow belt with a few mini marshmallows to make clouds. Sprinkle some of the gold sprinkles over the clouds. Scatter some of the rainbow bites around the bowl, on top of the fluff. Serve and enjoy!

Prep Tips

  • Texture – If your fluff seems a bit thin, you can add some more cool whip to thicken it. Refrigerating it also thickens it as the marshmallows have time to soak up some of the liquid.
  • Storage – Keep covered or in an airtight container in the refrigerator, for up to 5 days. Do not freeze.
  • Itโ€™s very important that you drain excess liquid off from any of your ingredients or you will end up with soup.
  • Substitutions – You can use 1 cup sour cream in place of the cottage cheese. You can also use any flavor of green gelatin that you like, such as sour apple or green watermelon.
  • Marshmallows – If you canโ€™t find the big poofy Lucky Charms Marshmallows, you can buy the regular marshmallows found in the cereal, on Amazon. These would work just fine, though they wonโ€™t offer the same fluffy texture as the regular marshmallows. Another option is to use rainbow mini marshmallows so you get pretty colors and fluffiness.
  • Sprinkles – You can use any gold sprinkles you can find, but try to avoid sanding sugar as it will just dissolve into the fluff and will be hard to see.ย

Frequently Asked Questions

Can You Make Fluff Salad Ahead Of Time?

Absolutely!ย While you can totally serve immediately, I prefer letting the salad chill in the fridge for a while because it thickens up and the flavors meld together better. If making ahead of time, I recommend waiting to add the garnishes and toppings until you’re ready to serve.

Ingredients

  • 16 ounces Cool Whip 1 large tub
  • 15 ounces Crushed Pineapple drained
  • 7 ounces Lucky Charms Marshmallows 1 typical bag
  • 7 ounces Marshmallow Fluff 1 typical container
  • 1 box Lime Jello 3 ounce box
  • 1 Cup Large Curd Cottage Cheese drained
  • 1 Cup Sweetened Shredded Coconut
  • 1 Cup Mini Marshmallows

Toppings & Garnishes

  • Airheads Xtremes Bites
  • Airheads Xtremes Belts
  • Gold Sprinkles Mix
  • Extra Mini Marshmallows
