Rainbow Crackers

These cheerful Rainbow Graham Crackers are an easy-to-make kids snack or St. Patrick’s Day treat!

Rainbow Graham Crackers

If you’re looking for the perfect snack to make this St. Patrick’s Day, your kids will be overjoyed to snack on these rainbow crackers. With just five ingredients and only a few minutes needed to prepare them, you can have your family celebrating in no time!

These little rainbow treats are perfect for class parties or a fun springtime snack too!

If your kids are interested in helping out in the kitchen, this is a great recipe for them to make! There is no cooking, heating, or cutting — so even little ones can get involved! And gosh, aren’t they just the cutest??

Bonus: These rainbow snacks are made with Greek Yogurt, which is a good source of protein, calcium, B-vitamins, and Vitamin A, to name a few. Now, of course they’re topped with sour candy, so I wouldn’t call them “healthy,” but it’s nice to know that there is a little bit of hidden nutrition in there!

Ingredients

Directions

Scoop about 1/2 cup of the yogurt into a bowl and add a couple drops of blue food coloring. Stir together until evenly colored, adding more food coloring if necessary.

TIP: You can also use blue frosting to save time, or to make this a non-dairy recipe.

Spread about a Tablespoon of blue yogurt onto each graham cracker square, so that the surface is mostly covered.

Bend one piece of rainbow gummy candy so that it forms a U-shape. Place the ends on the graham cracker, in the frosting or yogurt. Place a couple mini marshmallows on the outside of the rainbow, to help hold it in place. These will also be our “clouds.”

If using Greek yogurt, you’ll want to enjoy these rainbow snacks right away.

If using frosting, they will keep at room temperature for a day or two. I recommend storing in an airtight container to prevent the graham crackers fro getting stale.

Can this Recipe Be Made Gluten-Free or Dairy-Free?

Absolutely!

To make this recipe gluten-free, simply substitute gluten free graham crackers.

To make this recipe dairy-free, use blue frosting instead of the Greek yogurt. You can also use white frosting, mixed with blue food coloring.

As always, check the labels on any products used, to be sure that they are gluten or dairy free as expected.

Equipment

  • Mixing bowl

Ingredients

  • 3 Graham Crackers divided in half, so they are squares
  • 6 pieces Rainbow Airheads Candy
  • 1/2 cup Vanilla Flavored Greek Yogurt
  • Blue Food coloring
  • 24 Mini Marshmallows

Instructions

  • Stir a couple drops of blue food coloring into 1/2 cup Greek yogurt. You can also use blue frosting and skip this step.
  • Spread about a Tablespoon of the blue yogurt on top of each graham cracker square.
  • Bend the rainbow candy into a rainbow shape and press two marshmallows into the yogurt/frosting, on each side of the rainbow, on the outside, to hold it in place.
