Pancakes have always been a hit with my girls. They love everything about unicorns from the glitter to the bright colors in their manes. There are so many bright and colorful unicorn desserts, but not that many options when it comes to breakfast food.

These unicorn pancakes are both filling and fun! This breakfast recipe is easy to put together, and the perfect treat for a birthday, or any time you need a little magic in your life! These unicorn pancakes are pretty versatile, so your kids can create whatever kind of unicorn they want.

These Unicorn Pancakes are not only the most adorable breakfast you'll ever eat, but they also taste as good as they look!

Unicorn Pancakes Ingredients

  • 2 1/2 cups Flour
  • 3/4 teaspoon Salt
  • 2 Tablespoons Baking powder
  • 3 Tablespoons Sugar
  • 2 1/4 cups Milk
  • 3/4 cup Oil
  • 2 Eggs (beaten)

For the Decorations:

  • Colored sprinkles
  • Fresh blueberries (rinsed and drained)
  • Sugar cones
  • Purple icing or candy melts
  • Stabilized Whipped Cream

For the Stabilized Whipped Cream:

  • 3 Tablespoons Cream cheese (softened)
  • 16 ounces Heavy cream
  • 1 teaspoon Vanilla
  • 1/2 cup Powdered sugar

How to Make Unicorn Pancakes

  • In a large bowl, beat eggs with a whisk until they’re light and fluffy. Add the milk, and stir.
  • Add the oil, salt, and sugar, and whisk together.
  • Add the flour and baking powder, and whisk together just until ingredients are mixed. Your batter may still be a bit lumpy, but that’s okay!
  • Divide batter equally into two bowls. Add 4 or 5 drops of blue food coloring to one bowl and 4 or 5 drops of pink food coloring to the other bowl.

  • Heat an electric griddle or flat griddle on the stove over medium heat.
  • When griddle is ready, drop the batter for the pink pancakes with a ladle, and cook until golden brown.
  • Drop the batter for the blue pancakes with a small ladle, or small measuring cup.
  • The pink pancakes should be bigger than the blue pancakes – there is no “right” size for this – just eyeball it to see how big you want to make your unicorn pancakes.
  • When the top is covered in air bubbles, it’s time to flip the pancakes! Cook carefully until the bottom just starts to turn golden on the edges. Remove from heat to a holding plate.
  • Repeat until all pancakes are cooked.

To Make the Stabilized Whipped Cream:

  • In the mixing bowl of a stand mixer, cream the cream cheese with 2 Tablespoons of cream, until smooth.
  • Add the heavy cream, vanilla, and powdered sugar, and mix on low until all ingredients are combined.
  • Scrape down sides of mixing bowl, and mix on high until stiff peaks form.
  • Turn off the mixer, and place the whipped cream in the refrigerator until time to use.

How to Assemble Your Unicorn Pancakes

Arrange your pancakes on the plate: the pink pancake on the plate, topped with the blue pancake so that it covers about 1/3 of the pink pancake.

Place 1/2 a piece of cooked bacon on each side of the pink pancake for the ears.

Place 2 blueberries for the eyes, and 2 small pink candy balls for the nose.

TIP: You could also use small marshmallows or fruit pieces for either the nose or eyes, depending on what you have at home.

Place a dollop of whipped cream at the top of the pink pancake, and spoon along the side of the plate to make the Unicorn’s hair.

Ingredients

  • 2 1/2 Cups Flour

  • With the heat on a medium setting, drop the batter for the pink pancakes with a ladle, and cook until golden brown.
  • Drop the batter for the blue pancakes with a small ladle, or small measuring cup.
  • The pink pancakes should be bigger than the blue pancakes.
  • Flip the pancakes with a pancake turner, and remove to a plate to serve, starting with the pink pancake first, and the blue pancake on top.
  • Continue this step, until all pancakes have been cooked.

  • Place a sugar cone partially iced with purple frosting, and covered in colored sprinkles on top of the whipped cream, on top of the pink pancake.
