Blackberry Crumble Bars

Growing up, we had a blackberry bush in our backyard. It was so much fun to pick berries straight off the vine and enjoy them on the spot!

I still have a soft spot for all things blackberry, and these Blackberry Crumble Bars are a taste of my childhood!

Perfect for summer potlucks or simply a special treat, these blackberry dessert bars are easy and delicious! Just look at how they’re oozing with warm blackberry filling and topped with golden brown cobbler crumble. It’s just like blackberry cobbler, but a little less messy! (Ok, still a little messy but ohhhh so worth it!!)

The pictures alone are enough to get my mouth watering!

(Now just imagine smelling these blackberry pie bars cooking in the oven!)

When Are Blackberries in Season?

Fresh blackberries are at their best from May through September in the United States, though peak blackberry season varies depending on the region in which you live.

Generally, blackberries ripen from June to August. If you live in the South, blackberry season will be on the early end of summer and later in the northern states.

TIP: If blackberries aren’t in season, feel free to substitute with your favorite fresh berry variety.

Simple and delicious Blackberry Pie Bars

Ingredients

For the Crust/Topping:

  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 lemon
  • 1/2 cup unsalted sweet cream butter
  • 3 eggs

For the Blackberry Filling:

  • 4 cups blackberries
  • 1 Tablespoon lemon juice
  • 1 Tablespoon corn starch
  • 3/4 cups sugar

How to Make Blackberry Pie Bars

To make the dough:

The first thing I do with any baking project is to preheat the oven, so it’s ready to go when I am. Then I mix together the dry crust ingredients (plus lemon zest) andย then add in the butter.

TIP: If needed, pause the mixer and use a fork or your fingers to break up the butter into smaller, more manageable pieces.

Add eggs. Your goal is to end up with a crumbly dough (as opposed to a smooth batter).

To make the blackberry filling:

Add blackberries, lemon sugar, cornstarch and sugar to a large mixing bowl and stir together until well combined. Easy-peasy!

Build your blackberry cobbler bars:

Firmly press half of the dough into the bottom of the backing dish to form the crust.

TIP: You want this layer to be nice and solid, as it will be the base of your blackberry crumble bars:

Pour blackberry mixture over the crust and spread, then crumble the rest of your dough on top.

TIP: It’s ok that this layer is loose – it is the “crumble” in the Blackberry Crumble Bars after all.

Bake for 35-40 minutes or until the crumble appears slightly golden brown.

Remove from oven and allow to cool completely before cutting.

Ingredients

For the Dough & Crumble:

  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 lemon zested
  • 1/2 cup unsalted sweet cream butter cold and cut into cubes
  • 3 eggs slightly beaten

For the Blackberry Filling:

  • 4 cups blackberries cut in half
  • 1 Tablespoon fresh squeezed lemon juice
  • 1 Tablespoon corn starch
  • 3/4 cup sugar

Instructions

To make the dough:

  • Preheat oven to 350ยฐF and line a 9x13 baking dish with parchment paper.
  • In a standing mixer, add flour, sugar, and lemon zest. Mix until combined.
  • Add butter and continue mixing.
  • Stop the mixer and use your fingers or a fork to break up the butter into smaller pieces. Resume mixing.
  • Add eggs and continue mixing until a crumbly dough begins to form. Set aside.

To make the blackberry filling:

  • Add blackberries, lemon sugar, cornstarch and sugar to a large mixing bowl and stir together.

Build your blackberry crumble bars:

  • Press half of the dough into the bottom of the backing dish.
  • Pour blackberry mixture over the crust and speed with a rubber or silicone spatula until evenly distributed.
  • Crumble the remaining dough on top of the blackberry filling.
  • Bake for 35-40 minutes or until the crumble appears slightly golden brown.
  • Remove from oven and allow to cool completely before cutting.
