The BEST Healthy Meatloaf Recipe

Meatloaf is one of my dad’s favorite meals, so when I was growing up we ate a lot of meatloaf. Meatloaf, however, is NOT my thing. I always thought it was bland and boring.

And then my husband made meatloaf. Mind blown!!

Once again, my husband changed everything I thought I knew about a food I had written off long ago (see his “famous” Brussels sprouts recipe).

This Italian sausage meatloaf is packed with flavor, high in protein, contains a serving of fruits/veggies, and is gluten free. So not only does it taste amazing, but it’s actually GOOD for you!

Healthy comfort food for the win!

Italian Sausage Meatloaf with Roasted Pears

  • 1 lb ground beef
  • 1 lb ground sweet Italian sausage
  • 1 pear, peeled and sliced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup rice “bread” crumbs
  • 2 eggs
  • 1 TB garlic powder
  • 1 TB onion powder

STEP ONE: Add all ingredients except the pear to a large mixing bowl. Work together by hand until well combined.

STEP TWO: Place mixture in a greased bread loaf pan. Lay pear slices on top.

STEP THREE: Bake for 1 hr – 1 hr 15 minutes at 350°F ; Broil for an additional 7 minutes or until loaf is golden brown on top.

To make the Balsamic Reduction:

Add 4 cups balsamic vinegar to a medium saucepan. Simmer for 15-20 minutes or until the liquid is reduced to half its volume. Remove from heat; balsamic reduction will further thicken as it cools.

We enjoyed our healthy meatloaf with a side of mashed potatoes and ginger ale glazed carrots, which are one of the most amazingly easy (and tasty) side dishes on the planet!
