Avocado Crab Salad BLT Sandwich

Ok, so I am not exaggerating when I say that my husband makes the best BLT sandwiches. It seems like such a simple lunch staple, but there is something seriously magically about what he does with bacon! Well today, he one-upped even himself with this too-good-for-words Avocado Crab Salad BLT.

You'll never look at a regular sandwich the same again! This Creamy Crab Salad BLT is the perfect lunch recipe with a secret ingredient you've got to taste!

Let me paint the picture for you:

Warm toasty bread, cool creamy avocado and crab, fresh baby spinach, juicy tomatoes, thick crispy bacon, and a secret ingredient that takes it all to the next level.

But enough from me…on to the good stuff!

Ingredients

  • Sliced bread (we used gluten free bread, but you may use your favorite type)
  • 1/2 cup shredded crab meat (we used real crab, but you may sub imitation crab)
  • 1 avocado, mashed
  • 1 tomato, sliced
  • 1/2 cup mayonnaise
  • 1 Tablespoon lemon (or lime) juice
  • Splash hot sauce
  • Pinch salt & pepper (optional)

(Makes 4 small sandwiches or 2 large, depending on the size of your bread)

How to make this Creamy Avocado Crab Salad BLT Sandwich

STEP ONE: Toast bread and prepare bacon according to directions on package.

STEP TWO: Combine crab, avocado, mayonnaise, lemon juice and splash hot sauce in a small mixing bowl. Mash gently with a fork until all ingredients are incorporated together and there are no large lumps.

STEP THREE: Spread a generous spoonful of crab salad on one piece of bread. Layer fresh baby spinach, sliced tomatoes, and bacon. Spread a thin layer of mayonnaise on another piece of bread to complete the sandwich.

I added a few more splashes of hot sauce to my sandwich because I enjoy a little heat, but really this sandwich is amazing enough as-is!

Oh, and there is a little secret that will take this sandwich from amazing to OUT-OF-THIS-WORLD and I’m going to share it with you since you read through the whole post 😉

Here it is…

Chimichurri Mayo. You can find my husband’s famous chimichurri recipe here. Add a spoonful or two to your 1/2 cup mayo and stir together before you mix into the crab and avocado.

This is the best condiment ever! I use it on just about everything…I’m pretty much addicted! And you may be too after trying it!
