The Best Migas Recipe Ever

We just moved out into the country (which has been a lifelong dream of mine), and so far it has been nothing short of amazing and adventurous!

Y’all…in two weeks we’ve already had a cute little cat adopt us, picked fresh peppers from our own garden, and discovered a family of black widow spiders!

The only drawback is that school starts REALLY early here, so mornings are always a rush to get out the door on time. (Ok, so maybe the black widows are a little scary!)

Despite being in a hurry every morning, we always make breakfast a priority because kids (and grown-ups) need energy to function at their best throughout the day.

A quick breakfast doesn’t mean you’re stuck with cereal — believe it or not, you can create a from-scratch hot breakfast in about 10 minutes or less!

Migas is one of our go-to fast and easy breakfast recipes and it is one of my absolute favorites! This is the first breakfast my husband cooked for me – I’d never had migas before I met him!

In my humble opinion, this is the BEST migas recipe ever! I’ve sampled the migas at a number of restaurants across Texas and New Mexico and none of them compare!

What is Migas?

If you haven’t heard of migas either, let me break it down for you. The heart of any migas recipe is a heavenly marriage of eggs and crispy fried tortilla strips. Oh, the tortillas…swoon!!

Most authentic migas recipes add in sautéed onions and tomatoes. Cheese is not a necessity, but the preferred pick is Cotija cheese — a crumbly white Mexican cheese with a salty flavor.

Some variety of pork — most likely ham, bacon, or chorizo — rounds out the deliciousness that is an authentic migas plate.

Since we discovered Smithfield® Anytime Favorites®, we’ve been using their diced ham as our protein. You can’t beat the convenience and it’s already cut into the perfect bite-size pieces!

But the best part about this easy migas recipe is that anyone can make it in about 10 minutes or less — even me! My husband is the chef in our family, so if I say that a recipe is easy enough for me to make it, then I really do mean that anyone can!

Migas Ingredients

  • 4 corn tortillas, cut into strips
  • 1 Tablespoon cooking oil
  • 1/2 onion, sliced
  • 1 tomato, sliced
  • 1/2 package Smithfield® Anytime Favorites® Diced Ham
  • 3 eggs, scrambled
  • 1 Tablespoon Cotija cheese (optional)

How to Make Migas

First, stack 4-5 corn tortillas (I like extra tortillas!) and cut into strips that are about 1/2″ wide by 2-3″ long.

Add your tortilla strips to a large frying pan with 1-2 Tablespoons of oil over medium heat. Cook until tortillas start to turn golden brown and crispy.

Add sliced onions and tomatoes and cook until onions begin to turn translucent.

You’ll often see migas made with chorizo or bacon, but I’m loving our version with Anytime Favorites diced ham! Since the ham is pre-cooked, you save a lot of time over other proteins that need cooking before you can add them to the mix.

We used half a package for this migas recipe, so you’ll have some ham leftover for the next day’s breakfast or perhaps a tasty salad for lunch!

You can find Anytime Favorites near the meat section at your local grocery store – super convenient!

After adding your diced ham, pour in your scrambled eggs.

Stir as the eggs cook. As soon as your eggs begin to fluff up, remove from heat to prevent over-cooking.

We top our migas with a sprinkling of Cojita cheese and fresh salsa. You’re welcome to use any of your favorite fixin’s!

    Looks good, we have a lot of leftover ham (personally I wouldn’t buy Smithfield since it’s China owned now but I see the appeal of being easy) so looking forward to making this tomorrow morning!!
