Red White and Blue Cherry Bomb Brownie Cupcakes
I love patriotic holidays, and I love patriotic desserts!
There’s just something so festive about them, and you can really get creative and funky with your decorating.
These Cherry Bomb Brownie Cupcakes are the perfect example of everything I love about America themed desserts. They’re a bright explosion of red white and blue fun in one little bite.
They’re easy to whip up for your next summer party (about 30 minutes start to finish) and kids will love to make them too!

- 1 box brownie mix
- 1 jar Maraschino cherries
- White chocolate melting wafers
- Blue food coloring
- Red white & blue sprinkles
- Coconut oil
- Mini cupcake pan
- Mini cupcake liners

Patriotic Cherry Bomb Mini Brownies

To Make the Mini Brownie Cupcakes:
Prepare brownie mix as directed on the package. Spoon 2 teaspoons of brownie mix in each lined muffin cup. (Do not fill beyond 2/3 of the way full)
Bake brownies for about 8-10 minutes. Let cool completely before decorating.
To Make the Red White and Blue Dipped Cherries:
Line a cookies sheet with parchment paper or a non-stick silicone baking mat (weย loveย these mats because they are washable, reusable, and nothing sticks to them!)
Drain cherries and pat dry. Chill in fridge for about 10 minutes while your prepare your toppings.
Using a double boiler or microwave-safe bowl, melt the white chocolate.
Use a spoon to place a dollop of white chocolate into the center of each brownie cupcake.
TIP: Make this dollop thick enough that it will stay soft while you decorate your cherries.
Add 2-3 drops of blue food coloring to remaining white chocolate in mixing bowl along with one teaspoon of coconut oil. Stir together until smooth and color is a rich, light blue.
Remove cherries from fridge.
First, dip each cherry into the blue chocolate:
Next, gently roll your chocolate dipped cherry in sprinkles:
Place red white and blue dipped cherries on lined cookie sheet to dry.
Build Your Cherry Bomb Cupcakes:
When coating on cherries is hardened, gently press each cherry into the center of the white chocolate on cupcakes. If needed, add a bit of the remaining blue chocolate from your mixing bowl under the cherry to act as a “glue.”
Allow cupcakes to set completely before serving.

Red White and Blue Cherry Bomb Brownie Cupcakes
Ingredients

Can I make this the day before? If so, whatโs the best way to store for overnight?
The issue with making them a day ahead is that the cherries might release moisture and affect the chocolate coating. Kind of like how chocolate covered strawberries aren’t as perfect on day 2.
