Sweet Soy Glazed Chicken & Broccoli
This sweet soy glazed chicken and broccoli dish was a spur-of the moment creation from the hubby, but it was so amazing that I decided I had to share about it right away! (We literally just finished eating a couple hours ago!)
This sweet soy glazed chicken stir-fry recipe is simple, full of veggies, and done in 30 minutes — perfect for a weeknight dinner. It’s even gluten-free and a one-pot meal! The girls loved this recipe too; together we almost finished the entire pan!
Here’s what you need to make Sweet Soy Glazed Chicken & Broccoli:
- 2lbs boneless chicken thighs, cubed
- 2 cups broccoli, chopped
- 1 onion, quartered
- 1 cup sliced carrots
- 1/2 cup sliced mushrooms
- 2 stalks green onion, chopped
- 1 red bell pepper, sliced thinly
- 1 cup soy sauce (we used gluten-free)
- 1 1/2 cup chicken broth
- 1 cup brown sugar (or 1/2 cup honey)
- 2 TB ground ginger
- 2 tsp corn starch
STEP ONE: Add chicken to a large sauté pan with a tablespoon of cooking oil. Cook over medium heat with a pinch of salt and pepper until chicken is a little more than halfway done (about 10-12 minutes).
STEP TWO: While chicken is cooking, add soy sauce, 1 cup chicken broth, brown sugar, ginger, and cornstarch to a small saucepan and cook on medium-low heat, stirring occasionally until sauce begins to thicken.
STEP THREE: Add onions, peppers, and carrots to sauté pan and cook until they start to caramelize (about 4-5 minutes).
STEP FOUR: Add broccoli, mushrooms, and 1/2 cup chicken broth to sauté pan and cook for an additional 3-4 minutes.
STEP FIVE: Remove sauté pan from heat, add the sweet soy glaze from the small saucepan and stir until well-mixed. Top with green onions and serve over jasmine rice.
