Chocolate Chip Brownie Loaf

Chocolate lovers I have just the recipe for you!

This chocolate brownie bread is the ultimate chocolate dessert! It’s made with simple ingredients and three kinds of chocolate chips for so much chocolate flavor! Texture-wise, I’d describe it as a cross between fudge brownies and chocolate cake. You mix it all up, bake it in a loaf pan, and slice it like quick bread.

Serve it with coffee, with ice cream, or just grab a slice right out of the pan! I promise this is going to be a new favorite and there won’t even be crumbs left behind!

Ingredients

For the Bread:

  • 1 cup milk chocolate chips
  • 1 1/4 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 3 large eggs
  • 1 1/4 cups sugar
  • 1/2 cup canola oil or vegetable oil
  • 3/4 cup water
  • 3/4 cup semi sweet chocolate chips

For the Chocolate Ganache

  • 1 cup semi sweet chocolate chips
  • 3/4 cup heavy whipping cream
  • 1 cup mini chocolate chips

Instructions

To Prep: Preheat oven to 350 degrees F and spray a 9×5 loaf pan with non-stick baking spray.

To Make the Bread:

  1. In the bowl of a stand mixer (or in a large mixing bowl with an electric mixer), beat together the eggs and sugar until light and fluffy.
  2. Melt the milk chocolate chips in the microwave in 30 second intervals, stirring between, untilย melted and smooth. Be sure to use a microwave-safe bowl! Allow to cool for a few minutes.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda and salt.
  4. Mix the melted chocolate, canola oil and water into the bowl of the butter and sugar mixture.
  5. Gradually add the dry ingredients to the bowl of wet ingredients, mixing until well combined and smooth.
  6. Pour the brownie batter into your prepared loaf pan, sprinkle the semi-sweet chocolate chips on top, and bake in the oven for 80-90 minutes (or until a toothpick comes out clean with just a few crumbs).
  7. Allow bread to cool for 20 minutes before removing from pan and placing on a wire rack to finish cooling.

Ganache Directions:

  1. Place the semi-sweet chocolate chips in a heat-safe medium mixing bowl.
  2. Bring the heavy whipping cream to a simmer in a small saucepan. Once hot, pour the cream on top the chocolate chips and allow to sit for 2 minutes. Stir until smooth and all the chocolate is melted.
  3. Pour the ganache on top of the bread slowly, allowing it to drip down the sides of the loaf.
  4. Sprinkle mini chocolate chips on top and allow the ganache to set before slicing and serving.

Pre Tips

  • Removing Bread From Pan – To ensure that your bread doesn’t stick to the loaf pan, be sure to generously coat with non-stick spray. Another trick is to give the pan a good shake to loosen up the sides and bottom of the bread from the pan, before you flip the bread onto a wire cooling rack.
  • Garnish Ideas – This bread is a decadent treat all on its own! However, you can make this a special dessert by serving with a scoop of vanilla ice cream, a dollop of whipped cream, or a drizzle of chocolate syrup. I also love to top with peanut butter syrup! That’s one of my favorite flavor combos!
  • Storage – This bread can be kept in an airtight container at room temperature for 3-4 days. You can also keep it in the loaf pan and cover tightly with plastic wrap or aluminum foil. To freeze, wrap the loaf in plastic and place inside a large freezer bag or freezer container. It can stay frozen for 2-3 months.
