Brownie Chocolate Chip Cookie Dough Cake
If you are looking for a cake that combines all things sweet into a decadent cake, you will love this brownie cookie dough cake! With layers of fudge brownie and edible cookie dough, you never have to choose between cake and cookies ever again!
This is one of the most impressive layer cakes ever! And delicious too!
First, we started with chewy chocolate brownies to make the base of our cake. Instead of frosting between each layer, we used edible chocolate chip cookie dough. Then we topped this edible masterpiece with a smooth chocolate ganache. And of course, more cookie dough and brownie pieces!
This is a spectacular birthday cake or celebration cake for any occasion!

Ingredients

For the Brownie Layer
- 2 boxes brownie mix + necessary ingredients on the box
For the Cookie Dough Layer
- 3 cups all purpose flour
- 1 1/2 cups sugar
- 1 1/2 cups unsalted butter, room temperature
- 1 Tablespoon vanilla extract
- 3/4 teaspoon kosher salt
- 1 cup funfetti sprinkles
- 1 cup semi-sweet chocolate chips
- 6 Tablespoons whole milk
Chocolate Ganache
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
Kitchen Tools Used
- 10-inch cake board
- 9-inch cake pans
- Cookie scoop
- Piping Bag with Star Tip
- Squeeze Bottle
- Offset spatula
- Cookie Sheet
- Small Saucepan
Instructions
- Preheat the oven to 350°F and coat your cake tins with non-stick cooking spray. You’ll need 4 9-inch round pans, or you can bake in two batches if you only have two pans.
- Spread 3 cups of flour on a baking sheet.
- When the oven reaches temperature, cook the flour for 5 minutes, then remove it from the oven
- Allow to cool until you’re ready to make the cookie dough layer.
To Make the Brownie Cake
- Mix brownie batter according to package directions and divide evenly among the 4 prepared pans.
- Bake according to directions for using two 8-inch square pans (which are about the same volume as using two 9-inch round pans).
- Allow to cool completely before removing from pans.
To Make the Edible Cookie Dough
- In the bowl of a stand mixer, cream together the butter and sugar until fluffy.
- Mix in the vanilla, salt, milk, and the flour that you pre-cooked.
- Fold in the sprinkles and the chocolate chips with a rubber spatula.
To Make the Chocolate Ganache
- Using a small saucepan, bring the heavy whipping cream to a simmer.
- Place the chocolate chips in a heat-safe bowl, then pour the hot cream on top of the chocolate.
- Whisk until the chocolate melts and pour into a squeeze bottle.
To Build the Cake
- Place one layer of brownie onto the cake board.
- Scoop one cup of the edible cookie dough on top and spread evenly.
- Add a second layer of brownie. Top with another layer of cookie dough frosting.
- Place a third layer of brownie on top.
To Decorate:
Use the squeeze bottle to drizzle the top of the cake with chocolate ganache. I also pour some of the ganache along the edge of the cake so that it drips down the sides.
Decorate the top of the cake with scoops of cookie dough and brownie chunks (using the 4th pan of brownies, broken into bite-size pieces).
Frequently Asked Questions
Why Do You Need to Bake the Flour When Making Edible Cookie Dough?
Flour is considered to be a “Raw” food, meaning it hasn’t been heat treated to neutralize food-borne pathogens. Even bleached flour can still contain germs like e.coli, which may be picked up from the fields or during processing.
When you cook or bake flour, heat kills those germs, making it safe to eat. Because our cookie dough is not cooked, we heat treat the flour first. This makes the flour safe to use in our edible cookie dough recipe.
Can You Make Ganache in the Microwave?
Yes, you can make chocolate ganache in the microwave. To do so, you’ll need a microwave safe bowl and a microwave safe measuring cup.
Place the chocolate chips in the heat safe bowl. Pour the heavy cream into the microwave-safe measuring cup and heat for 30 seconds, up to 1 minute if needed. Keep an eye on the cream so that it doesn’t bubble up out of the cup.
Carefully remove the 1/2 cup of cream from the microwave (the cup may become hot) and pour on top of the chocolate chips. Stir quickly until melted and smooth.
Does This Cake Need to be Refrigerated?
This cake does not have to be kept refrigerated. When kept covered, it will stay good at room temperature for up to 3 days.
If you’d like to keep leftover cake longer, you can move to the fridge and store for up to a week.
