Slow Cooker Pepsi Pot Roast

This is one of the coolest recipe hacks I’ve discovered!

This crockpot Pepsi roast beef uses the tenderizing power of soda, delicious caramel flavors, and slow and low cooking to create an Asian-inspired dish that is so tender you won’t believe it! Seriously, you can cut it with a fork and it practically melts in your mouth!

It sounds strange, yes, soda with steak. But just trust me on this one!

The caramel flavors of the soda perfectly mingle with garlic and onion to create a savory dish with a hint of that umami flavor that is so addicting in Asian recipes! I’m not going to pretend it is authentic, but gosh it is tasty!

If you’re looking for an easy weeknight dinner that the whole family will love…that doesn’t require hardly any effort or clean-up…this one is a must-try!!

Does Soda Tenderize Beef?

Because of its relatively high acidity (low pH), soda makes an excellent meat tenderizer. Acids break down the proteins and connective tissues that can make meat tough, hard to cut or chew.

In this recipe, the combination of a soda-based marinade and slow cooking creates a roast that is so tender, you can cut it with a fork!

  • 1-2lb London Broil roast
  • 1 yellow onion, sliced thin
  • 1 head of garlic, peeled
  • 1 can of Pepsi (or similar soda)
  • 2 Tablespoons soy sauce
  • 1 Tablespoon rice vinegar (may substitute white vinegar)
  • 1 teaspoon onion powder
  • 1 teaspoon powdered ginger
  • Optional:ย Green onion and/or sesame seeds for garnish

What Other Cuts of Meat Can You Use?

The cut of beef we used in this dish was labeled “London Broil” — which I was surprised to learn is actually the name of a finished dish, rather than a cut of meat. However, you’ll sometimes see a roast labeled this way in the butcher department.

Other suitable cuts that you can use in this slow cooker roast recipe include beef chuck roast, round steak, skirt steak, flank steak, or blade steak.

Directions

It couldn’t be easier! Only two steps…

  1. Combine all ingredients in a crockpot.
  2. Cook on low for 4-6 hours.

Serve over rice and garnish with sliced green onions and sesame seeds, if desired.

Can You Cook on “High” Instead?

Slow cooker recipes are perfect for those days when you’re going to be around the house, but don’t have a lot of time to cook. Who doesn’t love a good set-it-and-forget-it dinner?

However, if you’re a little pressed for time, you may be wondering if you can put your slow cooker on “high” instead of “low” and get the same results.

Yes, youย can cook a roast in the slow cooker on high. This will take 3-4 hours instead of 4-6 hours on low, so it is a bit of a time-saver.

However, if you do have the extra time available, I recommend sticking with “low” for cooking a beef roast, as this will yield the most tender results.

    1. Hi Sandi! You don’t have to cut the meat before cookingโ€”just put the roast in the crockpot whole. Before serving, my husband recommends slicing the beef “across the grain” for the best texture. Enjoy ๐Ÿ™‚
