Slow Cooker Italian Chicken Drumsticks
In college, my sister and I lived together. While frozen chicken and broccoli was my specialty, my sister used to make a slow cooker chicken legs recipe that was out-of-this-world amazing! She definitely inherited most (ok, all) of my Granny’s talent in the kitchen.
It’s been a cold and rainy week here in Texas, so I decided to create my own spin on those easy slow cooker chicken drumsticks that I remember so fondly.
I recently noticed that Imagine® Foods soups and broths are now available at Walmart, so I picked up a few of my favorite varieties to have on hand at home. I especially love their Creamy Tomato Soup — it was another one of my favorite easy meals in college!
And that’s when inspiration struck…
I just had a hunch that those chicken drumsticks would taste fabulous after simmering all day in a slow cooker with Imagine® Creamy Tomato Soup, potatoes, and a bit of Italian seasoning.

The end result was just as delicious as I’d hoped! This is a hearty, wholesome dish that can easily be scaled up or down in size — perfect for a busy weeknight meal or to make when you’ve got company over for dinner.

Let’s talk a minute about the ingredients first, because that’s what really makes this recipe rock!

The Veggies
For our vegetables, we chose new potatoes and artichokes because they would hold up after hours in the slow cooker. The artichokes are especially delicious because they literally melt in your mouth and the potatoes soak up all the savory juices. It’s a winning combination for sure!
You can absolutely use fresh veggies, but we used canned to save time. Walmart has an expansive selection of canned vegetables at an unbeatable price!
The Chicken
I’m partial to drumsticks, but you could also use leg quarters or thighs for this slow cooker Italian chicken recipe. We left the skin on for cooking so the meat stays together. This method of “slow and low” cooking makes the meat so tender it falls off the bone!
We have a fairly large slow cooker, so we used two pounds of chicken drumsticks. However, you can use more or less meat depending on how many people you’re serving. I recommend making enough for each person to have 2-3 drumsticks.

My husband is the chef in our family, but this recipe is so simple that even I can handle it. All you need to do is add your ingredients to the slow cooker and set it to “low” for 4-6 hours or until chicken is done.
Seriously, it’s that easy!

Slow Cooker Italian Chicken and Potatoes
Ingredients
- 1-2 lbs chicken drumsticks
- 1 package Imagine® Creamy Tomato Soup 32oz
- 1 can new potatoes 15oz
- 1 can artichoke hearts 13.75oz
- 1 package Italian dressing mix
Instructions
- Add chicken drumsticks to slow cooker, followed by potatoes and artichoke hearts.
- Pour Imagine® Creamy Tomato Soup over chicken and vegetables, trying to coat as much surface as possible.
- Sprinkle Italian dressing mix on top and place lid on slow cooker.
- Cook on low for 4-6 hours, or until chicken is done.
