Easter Sugar Cookie Sandwiches

These Easter Sandwich Cookies as beautiful as they are delicious! These were such a blast to make! The Buttercream Frosting makes this the tastiest cookie sandwich ever! This is the perfect dessert for Easter!

We started with a basic sugar cookie dough – and you’ll only need to make ONE batch of dough for this recipe! We then divided the dough into four equal portions that we transformed into bright spring colors. We took two of the finished cookies and sandwiched them around a luscious homemade buttercream frosting.

These are BIG cookie sandwiches, just like you’d find at a fancy bakery! They are perfect for livening up the Easter table or for gifting to family and friends for the occasion.

Ingredients

  • 2 3/4 cups of flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup of butter (softened)
  • 1 1/2 cups of sugar
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • Pink, blue, yellow, and green food coloring (You can also use plant-based food coloring!)

For the buttercream filling:

  • 2 sticks of butter
  • 6 cups of powdered sugar
  • 1 tsp vanilla extract

Instructions

To Make the Cookies

To Prep: Preheat the oven to 350ยฐ and line a cookie sheet with parchment paper.

  1. In a small bowl, stir together the flour, baking soda, baking powder, and salt.
  2. In a separate larger mixing bowl, cream butter and sugar with an electric mixer until light and fluffy. Add in the egg and vanilla extract and mix to combine.
  3. Gradually add the dry ingredients to the bowl of wet ingredients, about 1 cup at a time, mixing as you add. Divide the cookie dough into 4 bowls and add about 2-3 drops of the food coloring to each one, mixing until you have 4 different colors of cookie dough.
  4. Scoop about 1 teaspoon of dough, roll it into a ball, and place it on the cookie sheet leaving about 1 1/2 inches between each dough ball.
  5. Bake in the preheated oven for 8-10 minutes or until the edges just start to turn a light golden brown. Let the cookies cool on the pan for a few minutes before transferring them to a wire rack to cool completely.

To Make The Frosting:

  1. In a large mixing bowl, beat together 2 sticks of butter and 3 cups of powdered sugar.
  2. Add the remaining 3 cups of powdered sugar and continue mixing.
  3. Add the vanilla extract and mix until the frosting becomes light and fluffy, about 3 minutes.

To Make The Sandwich Cookies:

  1. Scoop frosting into a piping bag.
  2. Pipe the frosting on the bottom side of one cookie.
  3. Place another cookie of the same color on top of the frosting (so the bottom side of that cookie also faces inward).
  4. Gently press the two cookies together so they stick together, but not enough to squeeze the frosting out the sides.

Prep Tips

  • Storage – Keep cookies in an airtight container at room temperature for 3-4 days. They do not require refrigeration. You can also freeze cookies by wrapping individually in plastic wrap and placing inside a gallon freezer bag.
  • Frosting – If the frosting is too thick or dry when mixing, add a splash of water to soften. You can also use milk as the liquid.ย If the frosting is too runny, add a bit more powdered sugar until you have the right consistency.
  • Colors –ย If dyes are a concern, you can also make these cookies with natural plant-based food coloring. Feel free to make these cookies with different colors if you like. You can easily customize for other occasions, such as red and green cookies for Christmas. Another fun idea is to leave the cookies a natural color and dye the frosting instead.
  • Clean-Up – When making the colorful cookie batter, be sure to rinse off the mixer attachment so it doesn’t blend in with the other colors you’re mixing.
