The after school snack is aย big deal in our house! In fact, the first thing my daughterย asks as soon as she returns home is almost always “Mom, what’s for snack?”

Spending all day in school can be draining, so I like to make sure Lilu gets a chance to relax and refuel before it’s off to activities or time to start homework. One of our favoriteย easy snack recipes is a yogurt granola parfait! It takes just a few minutes to prepare, and you can customize it with fun add-ins.

I love Fall, so I decided to create a festive version of our favorite parfait, incorporating the flavors of the season. Pumpkin, cinnamon, brown sugar โ€” it’s like a pumpkin pie in a glass (but better for you!)

The best part about this snack (or dessert) is that you can feel good about eating it and sharing it with your family. Each serving provides 13 grams of protein, 15% of your daily value of calcium, 1/3 of your daily whole grains, and a healthy dose of dietary fiber.

STEP ONE: In a small mixing bowl add Yoplait Greek 100 Yogurt, canned pumpkin, cinnamon, and honey (or brown sugar). Whisk together until well combined.

STEP TWO: While granola bar is still sealed in package, break it into smaller chunks (I placed it on the counter and pounded it a few times with my fist).

STEP THREE: Layer pumpkin/yogurt mixture, whipped topping, and granola until you’ve filled a small goblet or sundae glass.

Ingredients

  • 1 container Yoplait Greek 100 Yogurt vanilla
  • 1 single serving package Nature Valley Crunchy Oats & Honey Granola Bars
  • 1 cup whipped topping
  • 1/3 cup canned pumpkin unsweetened
  • 1/8 teaspoon cinnamon
  • 1/2 teaspoon honey or brown sugar either works perfectly, so you can use whichever you have on hand

    1. Hi Emma, the Yoplait Greek 100 cups that we used are 150 grams, or 2/3 cup. Our finished parfait was probably on the larger side for one person to eat alone in a sitting. I think it would be perfect for sharing…or you could save the other half for later! ๐Ÿ™‚
