Pumpkin Spice Curry

Halloween is almost here and even though it’s one of my favorite times of the year, I’m not always the best at planning things out ahead of time. Inevitably I end up rushing around at the last minute to finish costumes and pick up supplies. This year, however, I’ve decided to beat the crowds and take care of everything in advance!

So how does all of this relate to a chicken curry recipe? Interestingly, my husband and I had the inspiration for this dish while shopping for all of our Halloween essentials! Don’t worry, I’ll share the recipe — and you’ll never believe the “secret” ingredient!

My husband and I went to Walmart because we knew we could get almost all of our shopping done in one place. While there we couldn’t help but miss a giant Halloween display in the middle of the aisle.

One item in particular caught my eye: Pumpkin Spice Flavored NESTLÉ® TOLL HOUSE® Morsels. We already keep the semisweet variety on hand at home in case of any spontaneous baking projects, but I was so curious about how the pumpkin ones would taste! My husband, ever up for a cooking challenge, claimed he could use them to create a Pumpkin Spice Chicken Curry.

Now I know my husband can cook, but this was above and beyond even what I expected — yes, it really is that good. Pumpkin spice candy in a traditional Thai chicken curry recipe? Believe it! You’ve GOT to try it! (For all you Thai food fans, the taste of this is similar to Massaman-style curry which is a mild and slightly sweet).

PS- We also use these pumpkin spice morsels to make Pumpkin Pie Spice Muddy Buddies. They are absolutely delicious and easy to make for fall themed parties!

Here’s what you need to make Pumpkin Spice Chicken Curry:

  • 2lbs chicken thighs, cubed
  • 1 white onion, thinly sliced
  • 1 cup fresh green beans
  • 1 scup sliced carrots
  • 3 medium potatoes, cubed
  • 3/4 cup NESTLÉ® TOLL HOUSE® Morsels (Pumpkin Flavor)
  • 2 TB Thai red curry paste
  • 1 TB sriracha
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 TB onion powder
  • 1 TB garlic powder

STEP ONE: In large sauté pan, brown onions with garlic and coconut oil.

STEP TWO: While onions are caramelizing, in a medium saucepan, combine coconut milk, chicken broth, Nestles, curry paste, and sriracha. Stir until smooth.

STEP THREE: Add chicken, vegetables, garlic powder, and onion powder to large sauté pan with onions.

STEP FOUR: Add curry sauce to sauté pan and cover. Reduce heat to med-low and simmer for one hour. Serve over rice.
