Instructions
The directions may appear long, but it’s just because I tried to write everything as detailed as possible so you won’t miss a step! This is a basic sugar cookie dough that we make into two colors and roll up in a log. Then we slice this log into individual cookies and bake. Simple as that!
1. Make the Cookie Dough
In the bowl of a stand mixer, or in a large mixing bowl with an electric hand mixer, cream together butter and sugar for about 2 minutes. Add the eggs and vanilla extract and continue mixing.
In a separate bowl, whisk the dry ingredients together. Gradually pour the dry ingredients into the bowl of wet ingredients, mixing as you pour.
Once everything is fully incorporated, divide the cookie dough into equal parts. Place each half in a large bowl.
Add several drops of red food coloring to one bowl and mix until the dough is a bright red color. It may be easiest to knead with your hands.
Add several drops of pink food coloring to the second bowl of dough. Blend the food coloring into the dough until it is a deep pink color.
2. Make the Pinwheel
Cut four sheets of parchment paper about 13 inches x 11 inches each in size.
Place one piece of parchment paper on the counter, with the red dough on top of the parchment paper in the center. Cover with another sheet of parchment paper and use a rolling pin to flatter out the dough until it is 11 inches x 9 inches and 1/4 inch thick.
Transfer the dough, still pressed between two sheets of parchment paper, to a baking sheet.
Repeat the above process for the pink cookie dough.
Chill both cookie sheets of cookie dough in the refrigerator for at least 10 minutes.
Remove from fridge and peel back the top layer of parchment paper from each sheet of dough.
Lightly sprinkle the top of each sheet of cookie dough with water, then place the pink layer directly on top of the red layer, so that the parchment paper is on the bottom and on top. Gently press together. Trim the edges so you have straight edges, making a neat rectangle.
Remove the top sheet of parchment paper and begin rolling up the dough into a log. Take your time, making sure to press the layers together and roll up the dough as tightly as possible.
3. Decorate, Slice, and Bake
Pour sprinkles onto a plate or a sheet of parchment paper. Place the dough log in the middle of the sprinkles and roll so that it is completely covered in sprinkles. Press the sprinkles into the dough to ensure that they stay in place.
Chill dough roll for at least 15 minutes while you preheat the oven to 325 degrees.
Line cookie sheets with parchment paper or non-stick silicone baking mats. Cut the log into 1โ4 inch slices, placing them on your prepared pan.
Bake for 10-15 minutes at 325ยฐF.
Remove from oven and allow to cool for a couple minutes on the cookie sheets, then transfer cookies to a wire rack to finish cooling.
