Zucchini Bread with Chocolate Chips

Whether you’re in the mood for a sweet treat or just looking for a quick and easy snack recipe, you can’t go wrong with this easy zucchini bread recipe!

It makes the perfect quick and easy breakfast or after-school snack for the kids. I also love to have a slice (or two) with a cup of coffee. The kids love it because it’s dotted with chocolate chips, and you’ll love knowing that they’re getting some extra veggies!

Why Zucchini?

If you like banana bread, you’ll love zucchini bread too! Just like banana bread, zucchini bread is moist and full of flavor. Adding grated zucchini to the bread batter doesn’t make it taste like vegetables. What is DOES do is impart just the right amount of moisture so you never end up with a dry crumbly loaf of bread. It makes baking practically foolproof!

Every bite of this zucchini bread is rich, decadent, butter-y and studded with chocolate chips. And even though I wouldn’t necessarily call this a “healthy” recipe, you do get a little extra fiber and Vitamin A thanks to the zucchini. Sounds like a win-win to me!

Chocolate Chip Zucchini Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups grated zucchini, approximately 2 medium
  • 1 cup semi-sweet chocolate chips

Instructions

To Prep: Preheat oven to 350ยฐF. Coat a loaf pan with nonstick cooking spray and line it with parchment paper.

  1. In a small bowl, whisk together the flour, salt, baking soda, and baking powder together until well combined. Set aside.
  2. In a separate large bowl, mix together the sugar and vegetable oil for about 2 minutes, until the sugar is fully dissolved and the mixture is light and fluffy.ย Beat in the eggs for 30 seconds, then mix in the vanilla extract.
  3. Pour the contents of the bowl of wet ingredients into the bowl of dry ingredients and stir until just combined. Stir in the grated zucchini, then fold in the chocolate chips until they are evenly distributed.
  4. Pour batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted in the middle of the bread comes out clean. Remove from oven and place pan on a wire rack to finish cooling.

Prep Tips

  • Zucchini – Two medium zucchini should be perfect for this recipe and make about 1 1/2 cups once grated. It doesn’t have to be exact, but you do want it to be close to that amount. After grating the zucchini, be sure to drain well and pat dry with a paper towel or clean kitchen towel to remove any excess water from the veggies. You don’t want this excess moisture in the bread or it could end up soggy.
  • Chocolate – I like to use semi-sweet chocolate chips in baking because they perfectly balance out sweet baked goods. However, you can switch things up and use what you have on hand, whether it’s dark chocolate chips or milk chocolate chips.
  • Nuts – I’m not personally a huge fan of nuts in my baked goods, but I know that a lot of people are. You can totally add your favorite kind of chopped nuts to this bread before baking — I recommend about 1/2 cup. Pecans or walnuts would work well.
  • Storage – Wrap the loaf pan tightly with plastic wrap or aluminum foil and keep at room temperature for 2-3 days. You can also freeze zucchini bread as a whole loaf, or individual slices. If freezing slices, separate them with parchment paper before putting in a gallon freezer bag.
  • Yield –ย This recipe makes 1 standard sized loaf or about 12 slices/servings.
