Crispy Chicken Cobb Salad
Who says salads have to be boring?!
I’ll readily admit that salad is not usually my top choice for dinner. However, I do love me a good Cobb salad! And I loooovvveee crispy chicken!! So why not put the two together?!
If you order a Cobb salad from a restaurant, it is usually prepared with grilled chicken. However, if you’ve never had a Crispy chicken cobb salad, then you must try it! It’s out of this world amazing!! And with my top secret shortcut, this chicken Cobb salad is a breeze to whip up, even on busy weeknights!
What is a Cobb Salad?
The Cobb salad dates back almost a century, so named for its purported creator, famed Hollywood restaurateur Robert Howard Cobb. It is a big, hearty dish, meant to be enjoyed as a main course. (source)
A traditional chicken Cobb salad recipe consists of a mix of chopped lettuce and salad greens, tomatoes, avocado, bacon, hard-boiled eggs, and chopped chicken. Some recipes also include blue cheese, though we did not include any dairy in ours.
While it is common to see a chicken Cobb salad with grilled chicken, I think that it is especially delicious with crispy chicken. And when it comes to chicken, it doesn’t get any easier or tastier than Tyson® Crispy Chicken Strips!
Chicken Cobb Salad Ingredients
- 4-6 Tyson Crispy Chicken Strips
- 4 cups your favorite lettuce, chopped
- 1 cup cherry tomatoes, cut in half
- 1 jumbo avocado, sliced
- 4-6 bacon slices, extra crispy
- 2 hard-boiled eggs, sliced
Makes 2 dinner sized chicken Cobb salads.
Honey Mustard Dressing Ingredients
- 1 part stone ground mustard
- 2 parts honey
You can make this easy honey mustard dressing in any amount, so long as you use a 2:1 ratio of honey to mustard.
Instructions
First, prepare your Tyson Crispy Chicken Strips according to package directions.

To Make the Salad
While your chicken cooks, you can prepare the rest of your Cobb salad.
Start with a generous layer of salad greens to fill each plate. Romaine lettuce, butter lettuce, and spring greens are some of my favorite salad lettuces. I grow a few different types of greens in my garden, so I go with whatever is fresh and ready at the time.
Next, you’ll arrange tomato halves, avocado slices, bacon strips, and sliced hard-boiled eggs on top of the lettuce. My husband likes to give the tomatoes a pinch of salt to amp up their flavor. Tomatoes from my garden are always very tasty on their own, but sometimes store-bought tomatoes can be a bit bland.

When chicken strips are done cooking, remove from oven and allow to cool enough to handle. Cut each chicken strip into 4-6 slices, then place in the center of your Cobb salad.
To make the honey mustard dressing, simply whisk together honey and stone ground mustard. Drizzle as much dressing as you’d like on top of your finished crispy chicken Cobb salad.

A Cobb salad is easy to customize with your favorite veggies and herbs! Try these:
- Sliced cucumbers
- Cracked black pepper
- Chopped scallions
- A drizzle of olive oil
- Chopped red onion

Frequently Asked Questions
What Dressing Goes Best on Cobb Salad?
Vinaigrettes are a traditional choice for dressing a Cobb salad. Red wine vinaigrette, balsamic vinaigrette are both delicious accompaniments, if honey mustard is not your thing.
Personally, I love nothing more than honey mustard with crispy chicken, so that’s why we made our own honey mustard salad dressing for this dish. However, you are welcome to use any dressing you like!
Ranch dressing, oil and vinegar, or a dijon mustard dressing would all taste fabulous too!

Can You Make a Cobb Salad with Grilled Chicken?
Of course! In fact, a Cobb salad is traditionally made with grilled or roasted chicken or turkey. You could also use rotisserie chicken to save time.
Another time-saving option is to use crispy chicken breasts and slice those. They will be similar in flavor to the crispy chicken strips we used here.
