Gluten Free Crab Cakes made with Spaghetti Squash

I loooovee crab cakes, but they’re usually loaded with bread crumbsย โ€” they’re essentially gluten and calorie bombs! (Really, really yummy bombs, but still!)

My husband is the chef of the family, and his specialty is creating better-for-you versions of our favorite comfort foods. A couple simple switches to a traditional crab cake recipe make aย world of difference.

These crab cakes are made with spaghetti squash and potato starch as the “binder,” so they’re not only gluten free, but they’re low-carb too.

The only carbohydrates in this recipe are 3 tablespoons of potato starchย โ€” which is what is known as a “resistant starch” and not broken down into glucose (sugar) when digested. It doesn’t spike blood sugar or create a significant calorie load. [source]

Gluten Free Crab Cake Ingredients

(makes 6-8 crab cakes)

Tip: We saved a lot of money on crab by purchasing jumbo crab legs on sale and then cracking and removing the meat ourselves.

All good stuff and no filler!! These gluten free crab cakes are made with spaghetti squash, so they're lower in carbs too! Healthy, delicious, and easy!

How to make gluten free crab cakes:

Cut spaghetti squash in half โ€” remove seeds, brush with cooking oil, and lightly sprinkle with salt and pepper. Bake for 45 minutes at 370ยฐF face-down on a baking sheet lined with foil or a silicon baking mat (we use these for everything!)

When done baking, remove spaghetti squash from oven and allow to cool enough to handle. Remove squash rom shell and rough chop (doesn’t need to be super fine).

Add crab, spaghetti squash, green onion, potato starch, and green onions to a large mixing bowl. Toss by hand or with wooden tongs until well combined.

Form into small patties, using about 1/3 cup mixture for each. Lay on a parchment paper lined baking sheet. Chill in fridge for 10-15 minutes. (This allows the crab cakes to “set” and hold together better).

Add about 3 tablespoons cooking oil to a large sautรฉ pan. Place crab cakes in pan and fry for about 4-5 minutes on each side over medium heat. Be sure not to overcrowd the panย โ€” leave space between each crab cake in the pan.

You’re looking for the crab cakes to turn a rich golden brown on the outside. (All the ingredient are already cooked).

Remove crab cakes from pan and place on paper towel lined plate until ready to serve. Best enjoyed warm.
