Moroccan Chicken Stew with Honey & Apricots

My husband Mateo is the creative genius behind most of the recipes on the blog. (I definitely got lucky in that department because my talents in the kitchen are much more limited!)
I’m often asked what I would consider to be my husband’s “signature” recipe, and that’s a tough question to answer because it’s difficult to choose just one! Instead, I would say that Mateo’s signature is his ability to re-create almost any type of dish he sees.
We live in a very large and diverse city, and are fortunate to be able to sample cuisine from all over the world. My husband enjoys re-creating at home some of our favorite discoveries.
This week I’m sharing his spin on Moroccan Chicken, a rich stew that’s the perfect mix of sweet, savory, and spicy. Using ingredients from the Signature Kitchen line at Randalls makes this recipe surprisingly easy, but it will taste like you spent hours over the stove!
Moroccan Chicken Ingredients:
- 6 chicken thighs, bone-in
- 1/2 cup chicken broth
- 1 medium onion, diced
- 1 can diced tomatoes
- 1 can artichokes, drained and quartered
- 1 6oz bag dried apricots
- 2 TB clover honey
- 2 TB strawberry preserves
- 1/2 tsp smoked paprika
- 1 tsp onion powder
- 1/2 tsp crushed red pepper
- juice of one lemon
- chopped parsley for garnish
STEP ONE: Add 1 TB oil to the bottom of a dutch oven on medium heat. Add chicken thigh, skin side down and cook for 10 minutes. Remove chicken and set aside.
STEP TWO: To the same dutch oven, add diced onion and dried apricots. Cook until onions start to brown, stirring occasionally.
STEP THREE: Add remaining ingredients to dutch oven and stir until well combined. Place chicken thighs on top, skin side up. Cover pot and place in oven. Cook at 350° for 1 hour.
This decadent Moroccan Chicken stew is best served over rice and top with chopped parsley and/or additional crushed red pepper (if you like a little extra heat!)
