A taste of childhood nostalgia in every bite! These Neapolitan cookies feature three iconic flavors – chocolate, strawberry, and vanilla – rolled up and baked to perfection in a soft and chewy cookie.

Chocolate, vanilla, and strawberry. We all know and love them individually, but why limit ourselves to just one at a time? With these Neapolitan Cookies you’ll never have to choose again!

Neapolitan ice cream is a classic flavor combination of strawberry, chocolate, and vanilla ice creams layered side-by-side in the carton. It was a staple at birthday parties when I was growing up and of course, you had to get a little of each flavor in each scoop!

These Neapolitan cookies perfectly recreate the look and taste of that delicious triple-flavored ice cream. And you won’t believe how easy they are to make! (They’re cake mix cookies!)

I love cake mix cookies because they are so easy to make…they’re practically foolproof! The cake mix already contains all the dry ingredients you need: all purpose flour, leavening agents, etc. for the perfect fluffy cookie every time. All you have to do is add the eggs and oil!

No stand mixer or special equipment needed. Just mixing bowl, whisk, and baking sheet. But despite how simple they are to bake, these cookies look like you spent a lot of time and effort on them. The perfect celebration cookie for birthdays or any occasion! Let’s get baking!

Neapolitan Cookies ingredients: vanilla, chocolate, and strawberry cake mixes, oil, and eggs.

Instructions

  1. Add the chocolate cake mix, 2 eggs, and 1/2 cup of vegetable oil to a medium bowl and whisk together until a thick batter forms. Scoop the batter onto a sheet of plastic wrap, wrap it up to contain all the batter, and place it in the fridge to chill. Repeat this same process in a clean bowl with the strawberry and vanilla cake mixes in separate clean bowls. Chill all 3 flavors of batter in the fridge for 1 hour.
  2. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper or a non-stick silicone mat.
  3. Portion out about 1/2 Tablespoon of each cookie dough flavor, so you have 3 equal portions, and roll them together in your hand to form a cookie dough ball.
  4. Place the cookie dough balls on the prepared pan about 2 inches apart. Bake for 10 minutes or until the edges are set and the cookies start to look crinkly. Allow to cool for at least 5 minutes before enjoying.

Prep Tips

  • Cake Mix – The chocolate dough can be made with your favorite type of chocolate cake mix, devil’s food cake, etc. If you don’t have vanilla cake mix, you can use white cake mix or yellow cake mix for a similar look.
  • Variations – This technique can be used with different types of flavors so you can easily customize this recipe for other occasions. Try orange cake mix and white cake mix to create creamsicle cookies. Make tuxedo cookies with chocolate cake mix and vanilla cake mix only. The possibilities are endless!
  • Chilling the Dough – This step is essential to keep the cookies from spreading out too much during baking and for making the dough more cohesive and easier to handle when you’re forming the cookies. We wrapped each flavor of dough in plastic so we could wash and reuse the mixing bowl and also because it might be hard to fit three bowls in the fridge! But if you want to simply transfer the dough to smaller storage containers instead of wrapping in plastic to chill, that works too.
  • Storage – Keep the baked and cooled cookies in an airtight container at room temperature for 3-5 days. You can also freeze the cookies by wrapping individually in plastic wrap and placing them inside a gallon freezer bag.
