    1. We use potatoes in a lot of things (and sweet potatoes too!) I honestly LOVE a baked potato topped with lean protein, chopped spinach, and BBQ sauce. We also dice and saute potatoes with a touch of oil, salt, and pepper and have those for breakfast with eggs and whatever veggies we feel like mixing in.
