2. POTATOES – Potatoes have gotten a bad rap; it’s not the potatoes themselves that are unhealthy, it’s the way they are prepared and served that can be a diet-buster. Potatoes are actually packed with vitamins and minerals: Vitamin B6, potassium, Vitamin C, and Copper…just to name a few. They’re also a good source of dietary fiber. The key is eating them with the skin on and avoiding fried preparations or certain toppings. Try a baked potato topped with spinach and a dash of hot sauce or barbecue (look for ones without high fructose corn syrup) — delicious and satisfying!

We use potatoes in a lot of things (and sweet potatoes too!) I honestly LOVE a baked potato topped with lean protein, chopped spinach, and BBQ sauce. We also dice and saute potatoes with a touch of oil, salt, and pepper and have those for breakfast with eggs and whatever veggies we feel like mixing in. I love all these things and can’t imagine giving them up! I think the key is moderation. Can’t have too much or too often.
