Grinch Ginger Sandwich Cookies
These Grinch-inspired gingerbread sandwich cookies are as pretty as they are tasty, with cream cheese frosting layered between two chewy ginger cookies.
Grinch Gingerbread Sandwich Cookies
The Grinch was grumpy…these colorful Christmas sandwich cookies are anything but! These colorful Christmas cookies are sure to brighten up the usual holiday cookie spread. They also make wonderful gifts for family and friends and are just the thing for a holiday cookie exchange.
This is a classic chewy gingerbread cookie, filled with holiday spice. The filling is a cream cheese frosting…the sweet creaminess perfectly pairs with the spiced gingerbread flavor!
The green simply comes from a bit of food coloring (no crazy or hard-to-find ingredients here!) and we added a heart sprinkle on top as a nod to the classic Christmas story.
These Grinch sandwich cookies are perfect for a Grinch movie night for a family movie night, or as a new addition to your holiday baking list.

- 3/4 cup unsalted butter, softened
- 2/3 cup brown sugar
- 1/3 cup granulated sugar
- 1/2 teaspoon salt
- 1/4 cup molasses
- 1 egg
- 2 1/4 cup flour
- 1 teaspoon cinnamon
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon baking soda
- Green Food Coloring
- Red Heart Sprinkles
- 3/4 cup Cream Cheese Frosting (any homemade recipe or store-bought container is fine)

- Parchment Paper or Non-stick silicone baking mat
- Stand mixer or electric mixer with large mixing bowl
- Medium Cookie Scoop
- Wire rack
- Piping Bag with large round tip
Yield: 10 cookie sandwiches
Instructions
To Prep: Preheat oven to 350 degrees and line a baking sheet with parchment paper or silicone baking mat.
To Make the Cookie Dough:
- In a medium mixing bowl or the bowl of a stand mixer, cream together the softened butter, salt, brown sugar, and white sugar on medium speed.
- Add the molasses and egg and mix until smooth.
- Add green food coloring a few drops at a time, until you have your desired shade.
- Mix in the flour, cinnamon, ginger, and baking soda into the bowl of wet ingredients until combined and you have a thick cookie dough.
To Make the Ginger Sandwich Cookies:
- Use a Tablespoon to portion out balls of dough that are about 2 inches in diameter.
- Pour sugar onto a small plate. Use a small round glass and dip it into the sugar, then use it to press each dough ball. This will gently flatten the dough and put a small amount of sugar on top of each cookie.
- Bake for 10 minutes, then remove from oven to a wire rack. While the cookies are still warm, press a heart sprinkle into the top of half of the cookies. Allow to cool completely.
- Scoop the cream cheese frosting into a piping bag and cut the tip to about a ½ inch sized hole (if you don’t have a similar sized round tip). Take each cookie that doesn’t have a heart sprinkle on top, flip the cookie over, and pipe frosting onto the bottom. Take the cookies with the heart on top and use them to make a sandwich with the frosted cookies.
Prep Tips
- Watch cookies closely when baking. You don’t want them to brown because it will affect the desired green color.
- If you don’t have red heart sprinkles on hand, you can also use red candy melts and a piping bag to draw the hearts on top of the cookies. Another option would be melted white chocolate and a few drops of red food coloring.

Can You Make This Recipe Gluten-Free?
Yes! This is a fairly easy recipe to make into a gluten free cookie, with a couple substitutions.
First, you’ll want to use a gluten free all-purpose flour. These flour blends are already mixed to be ideal for baking, so I would recommend that over something like almond flour.
Canned frostings are usually gluten free already, but you’ll want to check the labels to be sure. At last check, Betty Crocker cream cheese frosting is gluten free.
Do These Cookies Need To Be Refrigerated?
Cream cheese frosting can be kept at room temperature for a couple hours, but for longer term storage, these cookies need to be kept in the refrigerator.
If you prefer not to refrigerate leftover cookies, you can use regular buttercream frosting instead of the cream cheese frosting. The flavors will still be fabulous! In this case, you can store your cookies in an airtight container at room temperature, for up to a week.

To Make the Cookies
- Use a Tablespoon to portion out 2-inch balls of dough.
- Pour sugar onto a small plate. Take a round glass and press the bottom into the sugar (so that some of it sticks to the bottom of the glass) and use the glass to press the cookies so they are flat on top and have some of the sugar on top.
- Bake for 10 minutes, then remove from oven to a wire cooling rack. While the cookies are still warm, press a heart sprinkle into the top of HALF of the cookies. Allow the cookies to cool.
- Scoop the cream cheese frosting into a piping bag and cut the tip to about a ½ inch sized hole, or use a round tip.
- Take the cookies that don't have a sprinkle on top and flip them upside down. Pipe frosting onto the bottom of them.
- Take the cookies WITH the sprinkle on top and place them on the frosted cookies to form a sandwich.
