Instructions
To Prep: Sort the black eyed peas to ensure that there are no big clumps of dirt or stones. Rinsing them in a colander can help with this step. Set aside.
- Add butter to the bottom of the Instant Pot and set to “sautรฉ” mode. Once the butter is fully melted, add the chopped bacon, minced garlic, and diced onion and sautรฉ about 10 minutes, or until the onions start to turn translucent.
- Add the black eyed peas, ham, salt, pepper, and broth. Put the lid on the pressure cooker and lock into place. Cancel the sautรฉ function.
- Use the pressure cooker setting (high pressure) and cook for 15 minutes. Keep in mind that the Instant Pot will take a few minutes to pressurize before it starts counting down the 15 minutes of cook time.ย
- Natural release for 20 minutes, then us manual release for any remaining pressure. Once all the steam has escaped, give the contents a stir and garnish with fresh parsley.
Prep Tips:
- Yield – This recipe will make about 8 cups of cooked black eyed peas in broth.
- Storage – Keep leftovers in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.
- Ham – If you have leftover holiday ham, this is a great way to use it! If purchasing at the grocery store, look for ham steak or a ham hock.
- Variations – This is also a great way to use leftover vegetables from holiday dinners too. You can dice up carrots or celery and add to the pressure cooker with the black eyed peas before cooking.
- Broth – While the original recipe calls for chicken broth, you can alternatively use vegetable broth or even water instead. If using water, you may want to add a bit of salt to taste to make sure that you don’t lose any flavor.
- Serve With – Black eyed peas are a simple side dish that pairs well with almost anything. They can also be enjoyed on their own as a soup/stew and served with cornbread.
