NYE Champagne Jello Shots

Toast the New Year with these gorgeous champagne jello shots! With just 5 ingredients and a few minutes of prep time, this is an easy way to add a special touch to your New Year’s Eve celebrations. I especially love how the gold sugar melts into the top of the jello shots and creates a metallic gold effect!

Another awesome thing about this idea is that you can have your New Year’s toast all ready to go…no rushing to pour the bubbly at the last minute! You can keep the jello shots in the fridge for up to a week so they’re ready to go when you are.

Anytime you have a special occasion that deserves a special treat, these champagne jello shots will be the perfect fit. Weddings, anniversary parties, bachelorette parties…any occasion that calls for champagne or a toast!

Instructions

  1. Stir together champagne and simple syrup in a medium saucepan. Sprinkle the gelatin powder on top and allow to โ€œbloomโ€ for 2-3 minutes, without stirring.
  2. Place the saucepan over medium heat and stir until gelatin dissolves completely.
  3. Remove from heat and pour in the ginger ale, stirring consistently. Go slowly and allow carbonation to fizz out completely.
  4. Pour the jello shot mixture into plastic cups that are lined up on a baking sheet or in a muffin tin. Move to the refrigerator to chill until completely set.

Non-Alcoholic Recipe

This is a very easy recipe to modify to make family-friendly! Simply substitute a non-alcoholic sparkling wine or sparkling grape juice for the champagne and you’re good to go.

If you are making a regular batch of champagne jello shots AND a non-alcoholic batch, I recommend doing something to make a visible distinction between the two. You may want to add a couple drops of food coloring to the family-friendly batch or use a different color of sanding sugar on top.

Prep Tips

  • Sprinkles – We decorated the tops of our jello shots with gold sanding sugar, to give them a sparkly look. I recommend waiting to sprinkle on the sugar until you’re ready to serve, so it doesn’t dissolve ahead of time.
  • Variations – You can customize your jello shots with a couple drops of food coloring or different color of sanding sugar, sprinkles, etc. to make them for different occasions.
  • Storage – If keeping in the fridge for long-term storage (anything more than a few hours), I recommend covering the tray of jello shots with plastic wrap or using plastic lids.

What Is The Best Champagne To Use?

Champagne is a name given to sparkling wine made in a specific region of France. You’re welcome to use any kind of sparkling wine that you like for this recipe, whether or not it is true “champagne.”

Personally, I love Cava (Spanish sparkling wine) and there are some very good and reasonably priced options made here in the US. I wouldn’t spend too much money on a fancy champagne, since you’re making jello shots and mixing it with other ingredients.

How Far In Advance Can You Make Jello Shots?

The great thing about jello shots is that they stay good in the fridge for up to a week, so you can make them ahead of time and keep them chilled until party time.
