Watermelon Margarita Jello Shots

When it gets hot in Texas, nothing cools ya off like an icy margarita! If you’re looking for a fun recipe for a summer party, why not try these tasty watermelon margarita jello shots?

Yep, you read that right…margarita jello shots!

When I was in college, jello shot recipes were popular. They were cheap and strong!

These watermelon jello shots are a more mature version of the college party favorite. They actually taste GOOD and they are really pretty too!

The bright pink color and salted rim make them instantly identifiable as a margarita! How fun!!

These cute jello shots are perfect for a backyard pool party or any occasion where you want to pretty up the party table and have a tasty treat for the grown-ups. Seriously, just looking at these pictures makes me want to go whip up another batch ASAP!

  • 1 packet watermelon Jell-o (pink color)
  • 2/3 cup of tequila
  • 1/3 cup margarita mix (liquid) or sweetened lime juice/limeade
  • Coarse Salt

Instructions

This recipe only takes about 20 minutes to make, but you will need to allow a few hours total time so the jello can set. Be sure to plan ahead!

  1. Boil 1 cup water in a small saucepan. Stir in watermelon gelatin powder until dissolved.
  2. Stir in tequila and margarita mix. The tequila takes the place of the cold water you’d normally use when making jello.
  3. Allow to cool for a few minutes (so it’s not hot enough to melt the cups) then pour the jello shot mixture into your plastic condiment cups. Chill in the fridge for 2-4 hours, until the gelatin sets up and is no longer liquid.
  4. When jello shots have completely set, dip the rims in simple syrup or corn syrup and then the salt so the rims are salted like a margarita glass.

Prep Tips

  • Place the shot cups on a cookie sheet so they are easy to move to the fridge to chill, without spilling.
  • Garnish with small lime wedges on the cups, just like a real margarita.
  • If making ahead of time, wait to add the garnish and instead put on the plastic lids that come with the shot cups.
  • You could also add watermelon gummies when serving for a fun touch!

Frequently Asked Questions

How Long Do Jello Shots Last in the Refrigerator?

Jello shots take about 2-4 hours to set up fully in the fridge after you mix them. After that, they will remain in a semi-solid state until you’re ready to use them. I’d recommend using them within 3-4 days.

Also, if you’re making these ahead of time, I would also wait to add the salt rim until right before you’re ready to serve.

What Kind of Tequila Should I Use?

As with any margarita recipe, I recommend using a mid-range tequila. There’s really no point to using a top-shelf tequila since you’re mixing it with Jello and won’t be able to taste what makes it special. I’d also avoid the cheapest tequilas because they won’t taste good and might not make you feel good afterwards. But anything in the middle should be fine, such as Cuervo, Espolón, or your favorite brand.

And if you’re wondering whether silver or gold tequila is preferable, this isn’t a big deal either. We used Cuervo Gold here, but silver tequila is great too. The gold color won’t affect the color of the jello shots because the jello mix is so bright.

TIP: If you’re not a fan of tequila, vodka or silver rum would also work perfectly in this recipe!
