Iced Matcha Lemonade is a uniquely refreshing summer drink, where the sweet and tart notes of lemonade are perfectly balanced by the distinctive earthy and herbaceous taste of matcha green tea.

This recipe is inspired by Starbucks’ Iced Matcha Lemonade, which was discontinued in March 2025 during a major menu update. If you’ve been missing this special drink, you’re going to love how easy it is to recreate at home!

You’ll typically experience an initial zesty and sweet burst from the lemonade, followed by a subtle, sometimes slightly grassy or “umami” undertone from the matcha. It’s not usually bitter if properly prepared and sweetened, but rather a harmonious blend where the citrus cuts through the richness of the green tea, creating a surprisingly clean and invigorating finish. Some describe it as a refreshing, slightly herbaceous lemonade, while others might pick up on a hint of a “green” or “vegetal” quality that is characteristic of matcha.

What is Matcha?

Matcha is a finely ground powder made from specially cultivated green tea leaves. When you make regular green tea, the leaves are steeped and then discarded. However, with matcha, you consume the entire leaf and get all the benefits from it.

Here are some of the benefits of matcha:

  • High in Antioxidants: Because you consume the entire tea leaf when you drink matcha, you get a much higher concentration of these beneficial compounds.
  • Metabolism and Fat Burning: There are some studies that suggest certain components (namely catechins and caffeine) in matcha can help boost metabolism and increase fat burning.
  • Contains L-theanine – Matcha contains more L-theanine than regular green tea. This amino acid is said to promote a state of “calm alertness,” enhancing focus and relaxation without the jitters often associated with the caffeine you’d get from coffee. L-theanine is also purported to improve cognitive function, memory, attention, and reaction time.
  • Other Potential Benefits: There is research that indicates matcha might also support the functions of the heart, the liver, and the immune system. The high chlorophyll content is also thought to aid in detoxification.

matcha lemonade ingredients, with text labels: honey, water, matcha powder, lemon juice.

Instructions

  1. Sift the matcha powder into a small bowl with the hot water, to dissolve.
  2. Use a hand frother or traditional bamboo matcha whisk (as we did) to stir the matcha until it forms a thick paste. Set aside to cool.
  3. Add the cold water, lemon juice and honey (to taste) to a large pitcher or mason jar. Stir well to combine. If using a mason jar, you can seal and shake to mix.
  4. Once the matcha paste has cooled to room temperature, whisk into the lemonade mixture until fully dissolved and incorporated, making sure to break up any clumps.
