Copycat Starbucks Cinnamon Dolce Latte

Fall is the best time of year! I love the cool weather (when it finally hits Texas that is), football, and of course all the  yummy Starbucks special coffee drinks, like the cinnamon dolce latte.

I remember when they first introduced the cinnamon dolce latte – what a treat! I LOVE cinnamon so this is right up my alley and always one of my favorites.

I am always a sucker for a great Copycat recipe, especially when Starbucks is involved! While Starbucks drinks are delicious, they can be a bit pricey if you’re stopping in every day! If you are looking for a simple DIY version you can make at home, this is a great recipe!

This simple homemade cinnamon syrup tastes just like the one they use at Starbucks, and I’ve even included a double recipe so you can make one for you and your favorite fellow Starbuck addict!

Save yourself some time and money by making this Copycat Starbucks Cinnamon Dolce Latte at home, instead of heading out to your local coffee shop every day!

What Does Cinnamon Dolce Mean?

“Dolce” means “sweet” in Italian, so Cinnamon Dolce literally means sweet cinnamon. And that’s exactly what it tastes like!

Spicy cinnamon blends with a combination of white and brown sugars to create a sweet cinnamon syrup. This syrup is then blended with steamed milk and coffee to create a frothy, luxurious experience.

Copycat Starbucks Cinnamon Dolce Latte Ingredients

For the homemade cinnamon syrup:

  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups water
  • 1 Tablespoon vanilla extract, optional
  • 3 cinnamon sticks

For two cinnamon dolce lattes:

  • 2-4 Tablespoons cinnamon dolce syrup
  • 2 cups strong brewed coffee
  • 2 cups milk
  • Cinnamon, for garnish
  • Whipped cream, for garnish

Tip: while I make my cinnamon dolce with a strong cup of coffee, you can make them with espresso for a more authentic experience.

Can You Make this Drink Non-Dairy?

Absolutely! I am lactose intolerant, so I usually substitute plant-based milks for myself. For writing the recipe, I just say “milk” because that is the standard.

Keep in mind that most plant-based milks won’t foam quite as well as dairy milk, though the taste will be just fine. I prefer almond, cashew, coconut milk, or oat milk in my coffee. I’d have to say that of all of those, oat milk foams the best, while cashew milk has the creamiest taste.

How to Make Starbucks Cinnamon Dolce Latte

 

For our copycat cinnamon dolce latte recipe, we started by making a batch of cinnamon coffee syrup. One batch should make quite a few cinnamon spice latte drinks, so you can make this once and keep it in the fridge so it’s ready when you need it.

For the homemade cinnamon syrup:

  1. Combine the sugars, water and cinnamon sticks in a small saucepan and bring to a boil, whisking occasionally.
  2. Reduce and let simmer for about 10 minutes, or until the volume is reduced by half.
  3. Take off of the heat and stir in the vanilla extract.
  4. Allow to cool to room temperature before refrigerating.

To Store: Keep in a sealed container in the fridge – we used a mason jar. I previously kept one in my cupboards and it only lasts about a week outside of the fridge.

To make two cinnamon dolce latte drinks:

Brew your coffee – I recommend making it twice it’s normal strength as you’re going to heavily dilute it with milk.

Pour milk into a saucepan over medium-high heat and whisk constantly (or use a frother).

Tip: Try using our homemade oat milk recipe! It’s super smooth and creamy!

When the milk is at least half foam, remove from heat.

Stir 1-2 Tablespoons of the cinnamon dolce syrup into the hot coffee and top with milk and foam.

I like my latte half-sweet, so about 2 teaspoons of the cinnamon coffee syrup is plenty for me, but you can add more or less to taste.

Garnish with whipped cream, a sprinkle of cinnamon and a drizzle of cinnamon dolce syrup or caramel. Enjoy!

TIP: Make it an iced cinnamon dolce latte by adding cold milk instead of hot frothed milk. It’s a sweet and refreshing treat for warmer days!

    Hi! You mention that the syrup only lasts about a week outside of the fridge. How long does it last in the fridge?

      It should last up to a month or so in the fridge – just give it the sniff test before you use it and make sure it still smells right 🙂

    Thank you! I usually would never drink, let alone buy Starbucks bc it’s so expensive! We took a trip to vegas and I tried this and loved it! I got home and I had to have them but at over 6.00 a drink I would spend to much. This is easy and tastes great.:) I even went as far as to make my own oat milk for my teenage daughter and her favorite drink. Didnt need a special espresso machine to have this yummy drink.

      I haven’t tried it that way — my concern would be that the cinnamon would not dissolve and the syrup would be grainy.
