Pineapple Mojitos
This pineapple mojito recipe combines the flavors of the classic Cuban cocktail of rum and mint with the sweet taste of pineapple.
Pineapple Mojito
My husband’s stepfather was Cuban, so there are a few recipes that my husband makes that he learned over the years. My husband himself is not much of a drinker, but I do occasionally love a refreshing cocktail!
The classic mojito is a blend of silver rum, fresh lime juice, sugar, and mint leaves. It is sweet, but not too sweet, a little bit bubbly, and the perfect thirst quencher on a hot summer day! (And it does get pretty hot here in Texas!)
This pineapple mojito recipe is a twist on that traditional Cuban drink. It takes everything you love in a mojito, and gives it a fresh fruity kick that you’ll love. Pineapple is such a great tropical flavor and it adds just the right amount of sweetness to the beverage.

Pineapple Mojito Ingredients

- 1 ounce Light Rum
- 1 ounce Pineapple Rum
- 3 ounces Club Soda
- 2 ounces Pineapple Juice
- 3 lime wedges, juiced
- Fresh Mint Leaves
- 1 Tablespoon White Sugar

Optional Garnishes
- Fresh Pineapple
- Toasted Coconut
- Mint Springs
Instructions
- Add lime wedges, sugar, and mint leaves to the bottom of your cocktail shaker. Use a muddler (or the back of a wooden spoon) to gently crush the mint leaves and lime wedges. Muddling is a must for mojitos and releases the oils so they can blend with the sugar and lime juice.
- Add ice, rums, and juice to the shaker and shake vigorously for 5-10 seconds.
- Pour the contents of the shaker (including ice, mint leaves, etc.) into your glass.
- Top with a splash of soda water and more ice as needed.
Garnish with mint sprigs and pineapple wedges.
To Make the Coconut Rim on the Glass
We rimmed our cocktail glass with toasted coconut for extra flavor and because it looks amazing!
- To do so, quickly toast shredded coconut in a small sauté pan with a touch of oil. Remove from heat as soon as the coconut starts to turn golden brown.
- Place the toasted coconut in a small saucer or plate. Fill another small saucer or plate with simple syrup.
- Dip the rim of the glass into the plate of simple syrup, then into the plate of coconut, to coat the rim of the glass.
- Allow to set while you mix the cocktail.
Frequently Asked Questions
Can You Use Simple Syrup for the Sugar?
You may often see simple syrup used in mojito recipes because it blends easier than regular sugar. However, that “crunchy” taste of granulated sugar is actually part of what makes a mojito a mojito!
However, that doesn’t mean that simple syrup is a bad substitute and you’re welcome to use it instead if you have some at the ready!
Can You Use a Different Type of Alcohol?
As far as rum goes, stick with white rum or even coconut rum. One substitution that I don’t recommend is spiced rum, as it is heavier and can overpower the delicate flavors of the mint and the lime…and it doesn’t really pair as well with pineapple.
If rum is not your thing, or if you don’t have any on hand, you may be wondering if another type of liquor would work for making mojitos. You could try using either tequila or vodka and both would blend well with the pineapple flavors. (In fact, I love the pineapple and tequila combination and make pineapple margaritas!)
Keep in mind that using another type of alcohol means that it’s not teqnically a mojito, nor will it taste exactly like what you’d get with a rum-based cocktail. But if it tastes good that’s what matters!
Can You Make a Pitcher?
If you want to make a big batch of mojitos for a party, here’s how to do it:
- Triple or quadruple the recipe amounts (depending on the size of your pitcher). It doesn’t have to be exact, as you can taste and adjust as needed.
- Muddle the limes, mint leaves, and sugar in your cocktail shaker. Pour into the bottom of your pitcher.
- Add rums and pineapple juice to the pitcher and stir well to mix. Top with club soda.
Keep the pitcher in the refrigerator, and pour into glasses of ice when you’re ready to serve.

What a great recipe! I can’t tell you how much I love pineapple. I love eating pineapple and adding it to everything. If something can be made with pineapple flavor, I prefer it.
