Oatmeal Chocolate Chip Bars

If you can’t decide between chocolate chip cookies or oatmeal cookies, these chocolate chip oatmeal bars give you the best of both worlds! They’ve got that soft, chewy texture of classic oatmeal cookies, buttery cookie dough flavor, and lots of melty chocolate in every bite. Basically…it’s everything you love, baked into one easy pan!

This is an easy no-fuss recipes that comes together quickly and slices up perfectly for sharing. Whether you’re making a batch for a party, packing them into lunchboxes, or just need something sweet waiting on the counter after school, these bars are always a crowd-pleaser!

Ingredients

  • Dry Goods: Brown sugar, granulated sugar, salt, baking powder, baking soda, all purpose flour, old fashioned oats, semi-sweet chocolate chips
  • Dairy: Unsalted butter, eggs
  • Flavorings: Vanilla extract

Instructions

To Prep: Preheat oven to 350 degrees Fahrenheit. Line a 13×9 baking dish with parchment paper and set aside.

  1. Blend Wet Ingredients: In the bowl of a stand mixer, cream together the brown sugar, granulated sugar and softened butter. Add in the eggs and vanilla.  Mix well, scraping down the sides often.
  2. Mix in Dry Ingredients: Add in the flour, baking soda, baking powder and salt.  Mix thoroughly, scraping down the sides as needed. Add the oats and mix well.
  3. Add Chocolate: Fold in the chocolate chips with a silicone spatula.
  4. Bake: Scoop the dough into the prepared baking dish and spread evenly. Bake for 30 minutes, or until the edges are just starting to turn golden brown and the center is set.

Prep Tips

  • Chocolate Chips: The classic recipe calls for semi-sweet chocolate chips. However, you can substitute with your favorite kind or what you happen to have on hand. Milk chocolate or dark chocolate chips also work well. You could even switch up the flavor with peanut butter chips, white chocolate chips, butterscotch chips, or even raisins!
  • Variations: Try adding a 1/2 teaspoon of cinnamon to the batter for a little hint of fall spice. While these bars are delicious on their own, you can make a fabulous cookie sundae by topping with a scoop of vanilla ice cream and a drizzle of chocolate syrup.
  • Storage: Once cooled, keep your oatmeal cookie bars in an airtight container in the fridge for up to 3-4 days.
