Have you seen the TikTok videos making cloud bread? Usually bright blue (or any other rainbow colors) and super fluffy, it looks irresistible!
We decided to make a chocolate version, because, well…chocolate!!! ๐
This was a BIG hit with the kids, who loved ripping the puffy loaf of chocolate bread into little bite-sized pieces.
I love chocolate and this has a nice chocolate flavor, but not so rich like you’re eating a piece of cake. It’s perfect for breakfast or a snack with the kids or to enjoy with coffee.
And honestly, making it is half the fun!
BONUS: This recipe is gluten free AND dairy free!
What is Cloud Bread?
There are two basic types of cloud bread — both are delicious, and popular for different reasons.
The original recipe was created as a low carb alternative to bread. Popular with Atkins dieters in the 1970s, this cream-cheese based “bread” enjoyed another spike in popularity when keto took over the diet market.
TikTok made a dairy-free version a viral smash in 2020 — and since I’m lactose intolerant, that’s what I decided to make!
The dairy free cloud bread starts with three base ingredients and is pretty easy to bake. It does take a little bit of time to bake and set, so give yourself about an hour to make it.
The TikTok cloud bread is substantially fluffier than the original, similar to merengue. If you’re looking for rich and creamy with high fat content, the original cloud bread is the way to go. If you want super light and fluffy, then you’re going to love our recipe!
Is Cloud Bread Keto?
Our recipe as written is not quite keto-friendly because it contains real sugar, albeit a small amount.
However, you can easily make this recipe low carb by substituting your favorite low carb sweetener! By doing so, you can reduce the net carb count to about 2g per serving.
It doesn’t contain a lot of fat, but it also shouldn’t kick you out of ketosis. I think it’s a great treat when you don’t feel like the usual heavy keto desserts. I did strict keto last year to lose the last of my baby weight, and sometimes I just felt weighted down by all the fat I had to eat (though I did lose a lot of weight!)

What You Need
The basic cloud bread recipe starts with 3 simple ingredients: egg whites, cornstarch, and sugar. To make our chocolate version, we added cocoa powder and a pinch of salt (to enhance the chocolate flavor).

- Unsweetened cocoa powder
- Salt

How to Make Cloud Bread
Preheat your oven to 350ยฐF and prep a baking sheet with Non-Stick Silicone Baking Mat or non-stick baking spray.
In a small mixing bowl, whisk together dry ingredients.
Separate egg whites from the yolks and add the egg whites to a large mixing bowl or the bowl of a stand mixer.
Add your dry ingredients to the egg whites, mixing on medium high until stiff peaks form. This should take about 10-12 minutes. As you mix, you’ll notice that the batter turns from a dark brown to a lighter color and fluffy texture.
When the batter is ready, you should be able to flip the bowl upside-down and it will stay in the bowl!
Scoop batter onto your prepared baking sheet and use an Offset Spatula to shape it into a dome — about 4-5 inches tall.
Bake for 25 minutes at 350ยฐF.ย Remove from oven and allow to rest on the pan until dry. This could take anywhere from 10 minutes to an hour.

How to Store Cloud Bread
Cloud bread is best enjoyed the day you make it, as it will lose some of it’s fluffiness over time. If you do want to save some for later, simply wrap in a paper towel.
Do not put in a sealed container, as this traps moisture and will make the bread soggy.

Instructions

would I be able to use powdered aquafaba in place if the egg whites, I’m allergic to eggs.

This looks fantastic, and I have a ton of egg whites in the freezer leftover from making ice cream for my kids. Iโm definitely going to give this a try!
Any suggestions on how this could be made non-chocolate and not sweet to use as a bread or bun substitute? Iโve tried the keto version with cream cheese before, but now have to greatly limit my dairy intake. Just not sure what dry ingredients to use in place of the 4 tbsp combined of cocoa powder and sugar.

Hay I dont know what I did wrong but when I tryed to make it, it stayed liquid. I’m very confused on what happend.
It’s delicious, I think I will cut most of the sugar. Do you know If I replace it with a sugar substitute would it come out the same?
