“Lightened Up” Frozen Mint Chocolate Chip Pie
This awesome no-bake recipe has all the refreshingly cool flavor you love in a Mint Chocolate Chip Pie, but with one simple swap to lighten it up! Sponsored by Simple Truth.
I love love love mint chocolate chip ice cream! In high school I worked at a diner and I think I made myself a mint chocolate brownie sundae to take home every night. (Back in the good old days where I could eat whatever I wanted and burn it off at soccer practice!)
Lucky for me, my husband whipped up this amazing, decadent mint chocolate chip ice cream pie — with a little trick that cuts out some of the fat and calories. But it tastes just like the real deal! Now that’s what I’m talking about!
This mint chocolate chip pie recipe is SO good, I know it’s going to be a regular on our party and birthday rotation!
“Lightened Up” Frozen Mint Chocolate Chip Pie Recipe
(makes one 8″ round pie)
Ingredients
- 2 pints Simple Truth Low Cow mint chocolate chip ice cream
- 2 sleeves mint chocolate sandwich cookies, separated
- 4 cups whipped topping
- 3 tablespoons butter, melted
- 1 cup chocolate chips
- 1/2 cup coconut oil
Directions
Separate mint chocolate sandwich cookies, placing the cookies in one bowl and the filling in another. Set cookies aside for later.
In a food processor combine 2 pints Simple Truth Low Cow mint chocolate chip ice cream, 2 cups whipped topping, and the mint sandwich cookie filling. Blend together until smooth and creamy. Place in freezer.
Note: Simple Truth Low Cow ice cream has 80% less fat and 60% fewer calories than regular ice cream, but tastes so rich and creamy that no one will ever be the wiser. This is an awesome way to “lighten up” your pie, without skimping on flavor!
Bonus — Low Cow ice cream is also high in protein, with 24 grams per pint!
In clean food processor, chop the chocolate cookies until finely ground.
Place 3 tablespoons butter in a microwave safe-container and heat until melted. Add to food processor with chocolate cookies and pulse until well-combined.
Spread and pat butter/cookie mixture into the bottom of a 8″ round pie pan to form the crust. Press the crust up the sides of the pan and spread until the surface is even as crust is about 1/4 inch thick.
Remove mint ice cream mixture from freezer and scoop into the pie crust, spreading gently with a spatula until surface is even. Return to freezer for 15 minutes or until set.
Scoop 2 cups whipped topping into pie crust, on top of the mint ice cream layer. Spread gently with a spatula until even. Return to freezer for 1-2 hours, until whipped topping is set.
Melt together 1 cup chocolate chips and 1/2 cup coconut oil in microwave, stirring every 15-30 seconds until smooth.
Note: This is our go-to chocolate coconut oil frosting and glaze recipe, because you get all the healthy benefits of coconut oil. However for this mint chocolate chip pie we used a bit more chocolate chips for an even richer flavor!
Pour chocolate glaze slowly over the top of your frozen pie – the cold surface will cause the chocolate to harden into a shell.
Place pie in freezer for 1 hour or until ready to serve.

Just wondering out of curiosity if sometimes you add protein powder to the cookies. If you do, how does it look afterwards?
We haven’t tried adding protein to this particular recipe, but we do add protein powder to oatmeal, pancakes, etc. and you can’t even taste it!
