Stuffed Pepper Carrots
These mini orange peppers are disguised as adorable carrots and filled with a zesty cream cheese spread. A healthy and fun Easter appetizer for all ages!
Mini “Carrot” Peppers for Easter
This is an easy Easter appetizer that you can whip up in 10 minutes and it turns out SO cute!
Start with mini orange peppers (the sweet kind) and cut them in half. They’re just the right size and shape for our recipe!
Then you’ll mix up a dreamy dill and cream cheese spread to fill in each pepper half.
The finishing touch is a sprig of fresh dill weed on top, which looks just like carrots greens.
This healthy appetizer will stand out on the Easter table spread that’s usually full of sweet treats. They really do look like little carrots don’t they?! This one was so fun I just couldn’t wait to share!

Ingredients
- 4 Mini Orange Peppers
- 1 Bunch Fresh Dill Fonds
- 4 oz Cream Cheese, softened
- 3 Tablespoons Sour Cream
- 1 Tablespoon Chopped Dill
- 1/2 teaspoon Ranch Seasoning

Instructions
- Slice the orange peppers lengthwise.ย Scrape out the veins and seeds from the middle of the peppers.
- Add cream cheese, sour cream, chopped dill and seasoning to a small mixing bowl and whisk together until well combined.
- Scoop the cream cheese mixture into each pepper half.
- Place a sprig of fresh dill into the cream cheese filling, at the top of the pepper, to look like carrot greens.
Prep Tips
- Substitutions – We used regular cream cheese and sour cream, but you can cut the calories by using light cream cheese and/or light sour cream. If you don’t have fresh dill on hand, you can use dried dill in the cream cheese spread. A sprig of fresh rosemary could also work for the carrot top. Also, you’re welcome to use a store-bought dip to fill in the peppers, to save time.
- Storage – This recipe can be prepared up to a day ahead of time, so it’s great for those busy days around the Easter holiday. Simply keep covered and refrigerated until you’re ready to serve.
