Breakfast is my favorite meal of the day! However,ย lately I’ve gotten in a bit of a breakfast rut.ย I’ve been craving a change and looking to add more protein to my mornings โ€” without just eating eggs.

I love to give my husband cooking challenges, so I asked what amazing breakfast recipe he could create with my new find. Without hesitation, he suggested a better-for-you spin on a traditional Mexican favorite: Arroz con Leche (translation: rice with milk). Only for his recipe, it would be quinoa with Orgain Organic Protein Almond Milkยฎ and a few tasty additions.

Quinoa itself is a good source of protein too, so this recipe would be a wholesome, protein-packed way to start the day. Not to mention,ย thisย hot breakfast cerealย is absolutely delicious and perfect for the cool Fall days ahead!

Here’s what you need to make this Toasted Coconut & Cherry Quinoa Breakfast Cereal:

  • 2 cups quinoa
  • 2 cupsย Orgain Organic Protein Almond Milkยฎ (we used the vanilla-flavored, lightly sweetened variety — it has less than half of the sugar of the leading brands’ sweetened vanilla almond milk!)
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1/2 cup slivered almonds
  • 1/2 cup toasted coconut
  • 1 cup dried cherries
  • 1 tablespoonย honey (optional, for additional sweetness)

It's easy & you can make ahead for the week!STEP ONE: In a large saucepan combineย 2 cups quinoa (rinse before adding to pot), 3 cups water,ย 1 cupย Orgain Organic Protein Almond Milkยฎ, 1/4 teaspoon salt, 1/8 teaspoon cinnamon, and 1 cup dried cherries. Bring to boil.

STEP TWO: After five minutes has elapsed, reduce heat and cover pot. Allow to simmer for 15 minutes.

Stir until just mixed. Top withย toasted coconut immediately before serving.

Ingredients

  • 2 cups quinoa
  • 2 cups Orgain Organic Protein Almond Milkยฎ we used the vanilla-flavored, lightly sweetened variety
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
