Breakfast is my favorite meal of the day! However, lately I’ve gotten in a bit of a breakfast rut. I’ve been craving a change and looking to add more protein to my mornings — without just eating eggs.
I was recently introduced to Orgain Organic Protein Almond Milk®, which has ten times the protein of other leading almond milks. Yes, you read that right– 10x the protein of other almond milks! I love to give my husband cooking challenges, so I asked what amazing breakfast recipe he could create with my new find. Without hesitation, he suggested a better-for-you spin on a traditional Mexican favorite: Arroz con Leche (translation: rice with milk). Only for his recipe, it would be quinoa with Orgain Organic Protein Almond Milk® and a few tasty additions.
Quinoa itself is a good source of protein too, so this recipe would be a wholesome, protein-packed way to start the day. Not to mention, this hot breakfast cereal is absolutely delicious and perfect for the cool Fall days ahead!
Here’s what you need to make this Toasted Coconut & Cherry Quinoa Breakfast Cereal:
- 2 cups quinoa
- 2 cups Orgain Organic Protein Almond Milk® (we used the vanilla-flavored, lightly sweetened variety — it has less than half of the sugar of the leading brands’ sweetened vanilla almond milk!)
- 1/4 teaspoon salt
- 1/8 teaspoon cinnamon
- 1/2 cup slivered almonds
- 1/2 cup toasted coconut
- 1 cup dried cherries
- 1 tablespoon honey (optional, for additional sweetness)
STEP ONE: In a large saucepan combine 2 cups quinoa (rinse before adding to pot), 3 cups water, 1 cup Orgain Organic Protein Almond Milk®, 1/4 teaspoon salt, 1/8 teaspoon cinnamon, and 1 cup dried cherries. Bring to boil.
STEP TWO: After five minutes has elapsed, reduce heat and cover pot. Allow to simmer for 15 minutes.
STEP THREE: In a large mixing bowl, add cooked quinoa, 1 cup Orgain Organic Protein Almond Milk® (may add more depending on the consistency desired), slivered almonds, and honey. Stir until just mixed. Top with toasted coconut immediately before serving.
