- Prep the Chicken – If using a rotisserie chicken, debone and chop the chicken into bite-sized pieces.
- Add to Bowl – Place the chopped chicken in a large mixing bowl with remaining ingredients.
- Combine – Toss everything with a large wooden spoon or spatula until well coated in the dressing and everything is evenly distributed.

Prep Tips
- Storage – Keep leftover chicken salad in an airtight container in the fridge for up to 3-4 days.
- Chicken – We used rotisserie chicken as a time saver. You could also cook your own chicken, whether using whole chicken, or chicken breasts, and then cut that into smaller pieces.
- Non-dairy Version – To make this a dairy-free recipe, omit the parmesan cheese, or substitute with grated vegan parmesan cheese.
- Relish – We make our chicken salad with sweet pickle relish (I especially love to chop up my Granny’s 13-day sweet pickles for this dish), but you could alternatively use dill pickle relish if that’s what you prefer.
- Serve with – Chicken salad is a versatile dish that can be served as a sandwich filler on toasted bread or a croissant, on a bed of greens as a salad, a dip for crackers, or stuffed inside a veggie like tomato or avocado.
