Salad Ingredients:

  • Shredded rotisserie chicken
  • Chopped iceberg lettuce
  • Cherry tomatoes, halved
  • Diced cucumber
  • Red onion, thinly sliced
  • Avocado, diced
  • Cooked bacon, chopped
  • Crumbled feta cheese

Instructions:

  1. Prep the Ingredients – Chop the lettuce, shred the chicken, cut the cherry or grape tomatoes in half, slice the onion, dice the cucumber, cook and crumble the bacon, and cut the avocado.
  2. Add to Bowl – In a large bowl, combine the ingredients you just prepped and sprinkle with crumbled Feta cheese
  3. Make the Dressing – Whisk together dressing ingredients until combined and smooth.
  4. Assemble the Salad – Drizzle the honey mustard dressing on top of the salad and toss gently to coat. Enjoy immediately.

Prep Tips

  • Chicken – Using rotisserie chicken is a big time-saver, but you can also cook up a couple chicken breasts to use for this recipe instead. It is also a great way to use up leftover cooked chicken if you have some on hand!
  • Dressing – Don’t care for honey mustard? Substitute your favorite salad dressing instead! Ranch dressing is a classing and always tasty with chicken and bacon!
  • Substitutions – Romaine lettuce can be used in place of iceberg lettuce. You can also swap out any of the veggies with types that you prefer or have on hand, such as sliced bell peppers or celery.
  • Garnish – Customize this salad with your favorite toppings! Fresh herbs, such as scallions or green onion, fresh parsley, oregano, or cilantro are flavorful additions. You could also add nuts for a bit of crunch, like almonds, pecans, or walnuts.
  • Storage – Keep leftovers in an airtight container in the refrigerator for up to 3 days. If possible, and especially if you’re making this ahead for meal planning, store the dressing separately to help maintain the salad’s crisp texture and crunch. Then you can toss everything together right before serving and it’ll taste freshly made. If meal prepping, you may also want to wait to add the softer vegetables like tomatoes or avocado just before eating so they don’t get mushy.

Ingredients

For the Salad:

  • 2 cups rotisserie chicken shredded
  • 4 cups iceberg lettuce chopped
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup red onion thinly sliced
  • 1 ripe avocado diced
  • 4 slices cooked bacon chopped
  • 1/4 cup feta cheese crumbled

For the Honey Mustard Dressing:
