Easy BBQ Stuffed Avocados

Basketball season is a big deal in our house! Sadly, my team is not in the tournament this year, but we’ll still be watching…and cooking up a feast!

When it comes to game day parties, barbecue is a staple here in Texas. One of my favorite ways to eat barbecue is on a baked potato, but that doesn’t quite work as an appetizer.

So instead, we took the idea of a barbecue baked potato and made it a little bit lighter, as well as a smaller size that’s perfect as a party appetizer.

Behold, the BBQ Stuffed Avocado!

Ingredients

  • 1 package Curly’s Pulled Pork 
  • Avocados
  • Shredded cheddar cheese
  • Pickled jalapeños
  • Green onion

How to Make Stuffed Avocados with Barbecue

The best thing about making stuffed avocados is they are easy! This BBQ stuffed avocado recipe only takes about 15 minutes to make, from start to finish. That’s because we use Curly’s BBQ so we can spend less time in the kitchen and more time watching the games!

Let’s talk a little bit about the ingredients…

The Barbecue: Curly’s BBQ Pulled Pork

We love Curly’s BBQ because their products taste like homemade, but are pre-cooked so all you have to do is heat and serve! The pulled pork is one of my favorites — we’ve made quite a few fun recipes like Mini Monte Cristo Sandwiches and West Virginia Style Pork BBQ Sandwiches.

How to Choose an Avocado

Jumbo avocados work best for this stuffed avocado recipe because they have more “meat” than smaller avocados. That helps them to hold all the ingredients and keep their shape.

Look for an avocado with a little give to it — soft, but not mushy. Cut each avocado in half and remove the pit.

Use a spoon to scoop out a larger opening in the middle of each avocado half:

How to Layer Your Stuffed Avocado

We started with a layer of Curly’s BBQ Pulled Pork, then topped it with the extra avocado we removed earlier. Then we added another heaping spoonful of barbecue and topped it with a generous helping of shredded cheese.

Pickled jalapeños give these BBQ stuffed avocados the perfect spicy kick. After broiling, we finished our stuffed avocados with chopped green onions.

Other topping ideas:

  • A drizzle of ranch dressing
  • Pickled pink onions
  • Avocado crema sauce

Just look at all that melty, cheesy, BBQ goodness! My team may not be a winner this year, but these BBQ stuffed avocados sure are!

Ingredients

  • 2 large avocados
  • 1 package Curly's BBQ Pulled Pork
  • 1/2 cup cheddar cheese
  • pickled jalapeños sliced
  • green onion chopped

Instructions

  • Heat Curly's BBQ according to directions on package.
  • Cut avocados in half and remove pit.
  • Use a spoon to hollow out a larger hole in the middle of each avocado. Save this extra avocado - we'll use it later.
  • When barbecue is warm, spoon into the middle of each avocado, so that it is even across the top.
  • Chop up the extra avocado that you removed earlier and place chunks of avocado on top of the barbecue.
  • Add another spoonful of barbecue, so that each avocado is piled about an inch high.
  • Top with cheese and broil for 2 minute.
  • Remove from oven and top with sliced jalapeño and chopped green onion.
