Taco Charcuterie Board

Tacos are a THING in our house — we have them for breakfast, lunch, and dinner! My husband is pretty much a genius at creating new and unique taco recipes using whatever we have in the fridge. And they always taste amazing!

This Taco Charcuterie Board is perfect for any occasion…from Cinco de Mayo to Taco Tuesdays! Like our family’s tacos, you can customize this board with your favorite fixings or whatever you have on hand at home. There’s no “right” way to make it, so you can’t mess up!

I’ve put some suggestions in this post, as well as simple recipes to prepare seasoned ground beef, and guacamole, street corn salsa. Feel free to use our recipes, store-bought salsas, or your own recipes.

Ingredients

Here’s what we layered on our taco board:

  • Seasoned Ground Beef Taco Meat

  • Elote (Mexican Street Corn)
  • Sautรฉed Onions and Peppers

  • Shredded Colby Jack Cheese
  • Shredded Purple Cabbage
  • Sliced Mini Peppers
  • Sliced Jalapeรฑos
  • Lime Wedges
  • Hard Taco Shells
  • Flour Street Taco Tortillas
  • Tortilla Chips
  • Salsa
  • Fresh Cilantro
  • Cotija Cheese

Other Taco Toppings To Try

Our taco charcuterie board is filled our favorite taco fixings, but you’re welcome to swap them out with some of your own favorites! Here are some other tasty taco toppings to consider:

Instructions

  1. Layer the shredded purple cabbage in a circle in the middle of a large wooden board.
  2. Fill small bowls with salsa, guacamole, street corn, pico de gallo, cheese, chopped cilantro, etc. and place the bowls around the edges of the board.
  3. Prepare the taco meat and scoop on top of the red cabbage in the center of the board.
  4. Fill in the rest of the space on the board with stacked taco shells, shredded cheese, tomatoes, peppers, and lime wedges. Any additional space can be filled in with tortilla chips.

How To Cook Taco Meat

We used a homemade taco seasoning blend for this recipe, but you could also start with a packet of your favorite taco seasoning mix. Here’s what is in ours:

  • 1/2 TB Chili Powder
  • 1 tsp. Cumin
  • 1 tsp. Salt
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Onion Powder
  • 1 TB Mexican Spice
  • 1 tsp. Smoked paprika
  • 1 tsp. Spanish Oregano
  • 1 tsp. Crushed Red Pepper

Whisk together the above seasoning ingredients in a small bowl, then add to a large sautรฉ pan with 1 pound of lean ground beef, 1/2 cup fire roasted tomatoes, and 1/4 cup water. Cook over medium heat or medium high heat, stirring occasionally, until the meat is cooked through.

How To Make Elote

Elote is a Mexican street corn, or corn salsa. It’s fresh, flavorful, and juicy and makes a tasty taco topping!

How To Make Guacamole

When it comes to guacamole, simple is best! This is a quick and easy homemade guacamole recipe:

  • 3 large ripe vvocados, seed removed and skin removed
  • 1/4 cup chopped fresh cilantro
  • 1-2 jalapenos, seeds removed and diced
  • 1 TB minced garlic
  • 2 TB lime juice
  • 3/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Separate the avocado flesh from the seeds and skins and add the avocados to a large bowl. Smash with a potato masher, until mostly smooth, with a few small chunks. Add the rest of the guac ingredients and mix to incorporate. Scoop into a serving bowl.

Prep Tips

  • Instead of ground beef, you could also use shredded chicken or fajita steak as your taco meat in the middle of the board.
  • When I prepare charcuterie boards, I usually serve with a big bowl of chips on the side. That way there are plenty, even if they don’t all fit on the board.
  • Feel free to swap out store-bought items, such as guacamole, to save time!
  • If you don’t have a large wooden cutting board, you could also use a large sheet pan for your charcuterie board.
