Valentine’s Day Cheesecake Brownies

Nothing says I love you quite like these delicious Valentine’s Day Cheesecake Brownies. Combine these two classic desserts into one flavorful treat that your sweetheart will love!

These heart-shaped brownies are actually red velvet brownies that are swirled with cheesecake batter and a touch of raspberry jam and topped with a layer of white chocolate. We finished our brownie hearts with sweet little messages, so they look like conversation hearts (except these brownies taste way better!)

This is a fun recipe to make with the kids, for Valentine parties, teacher gifts, or just to enjoy together. And they’re actually pretty easy too!

For the Brownie layer

  • 1/2 cup butter, melted
  • 1/4 cup cocoa
  • 1/2 cup sugar
  • 2 tbsp brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 tsp white vinegar
  • 3/4 cup all purpose flour
  • Red food coloring
  • Pinch of salt

For Cheesecake layer

  • 1 cup cream cheese, softened
  • 1 large egg
  • 1 tsp vanilla
  • 3 Tablespoons sugar
  • Raspberry jam (optional)

Valentine’s Day Cheesecake Brownies Ingredients

Instructions

To Prep: Preheat oven to 350°F and line an 8-inch square pan with parchment paper.

  1. Mix together the butter and sugars. Mix in the eggs, cocoa powder, vanilla extract, flour, salt, and red food coloring. Whisk until well combined and bright red in color, then pour the red brownie batter into your prepared pan.
  2. In a separate mixing bowl, blend the cream cheese, vanilla extract, sugar, and eggs. Spoon the cream cheese mixture on top of the brownie batter and swirl. If you’d like to add fruit flavor, you can swirl in raspberry jam here too.
  3. Bake for 30-35 minutes, then allow to cool before using a heart-shaped cookie cutter to cut out brownie hearts.
  4. Spread melted white chocolate on top of the brownies and allow to harden. Pipe melted red candy melts on top of the brownies to spell out phrases that you might see on conversation hearts, such as “be mine.” Allow to set completely before serving or storing.

Prep Tips

  • We used red candy melts to write the Valentine messages on top of the brownies, but you could also use melted white chocolate and mix in red food coloring for the writing.
  • We used white chocolate to make the “frosting” on our brownies because as it dries, it will harden and keep its shape. In a pinch, you could use regular white frosting.
  • Want to switch it up? Try using different colors of frosting or melted chocolate to make these brownies really look like a rainbow of conversation hearts!
  • You can use a spoon to stir the cheesecake into the brownie batter to make swirls, but a butter knife works really well too!

If you’re looking for a little time-saver, you can start with a box of brownie mix for the base. Prepare according to directions on the box and mix in red food coloring to get the red velvet look. You could also start with a red velvet brownie mix if you find one at the store!
