One-Pot Portuguese Sausage and Kale Soup

After record-high temperatures over Christmas, the weather is finally settling in to what we expect in December. This Portuguese Sausage and Kale Soup is the perfect “warming” recipe for cold winter days. Plus, it’s PACKED with veggies and leafy kale greens, perfect for cleansing our systems after all of the rich food we enjoyed during the holidays.

Portuguese Sausage and Kale Soup is the PERFECT recipe for getting your eating on track after the holidays! Packed w/veggies & protein, plus it couldn't be easier: a one-pot meal!Getting your eating back on track doesn’t have to be boring! This soup is hearty and filling, with liberal chunks of sausage and potatoes. Did you know that potatoes contain a significant amount of your daily requirements of 9 vitamins and minerals including Vitamin B6, Potassium, and Vitamin C? Potato-lovers rejoice!

Kale is one of the most nutrient-rich foods on the planet and may actually help protect your body from cancer. (It can’t hurt anyway!) This Portuguese Sausage and Kale Soup is a delicious way to get tons of this leafy green superfood into your system!

The best part? This Portuguese Sausage and Kale Soup is SUPER easy! It’s a one pot meal and is ready in under an hour (but doesn’t require you to stand over the stove the whole time).

The final result was a rich broth (seriously, you won’t believe how much flavor it has!), bursting with colorful veggies and proteins. Oh, and it is kid-approved (even by our littlest who is in the picky toddler stage!)

Here’s what you need to make Portuguese Sausage and Kale Soup:

  • 1 lb smoked sausage (beef or pork)
  • 1/2 lb dry chorizo sausage, chopped
  • 64 ounces chicken broth
  • 1 bunch Kale, chopped
  • 4 Potatoes, cubed (any type)
  • 1 cup carrots, sliced
  • 1 Leek stalk, thinly sliced
  • 1 whole onion, quartered
  • 1 TB fresh garlic, chopped
  • 1 TB garlic powder
  • 1 TB onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Sauté in a tablespoon of cooking oil until onions start to brown.
