Apple Blueberry Baked Donuts
My husband is a huge fan of donuts, so we’ve tried a LOT of donut stores and recipes! We’ve even made a few at home!
One of my favorite flavors of donuts are blueberry cake donuts — they are a popular offering here in Texas. However, why not make your own at home…and jazz them up a bit?
This recipe starts with soft and fluffy blueberry cake donuts, with lots of real blueberries infused in the batter, plus a touch of apple pie spice. Apple pie and blueberry flavors pair together just perfectly!
Then we dipped each donut in a light vanilla glaze and coated in crunchy streusel topping. It’s a delightful contrast in textures and flavors! The streusel topping takes these donuts to the next level!!
This delicious baked donut recipe is so simple to make, and the perfect donut recipe to enjoy during the cooler months. It’s like an apple pie and blueberry cobbler put together! Trust me, you won’t be able to eat just one!
Apple Blueberry Donut Ingredients

- All purpose flour
- Baking powder
- Baking soda
- Light brown sugar — packed
- Large eggs
- Buttermilk
- Unsalted butter — melted
- Blueberries
- Pure vanilla extract
- Apple pie spice — You can also use our homemade apple pie spice recipe to make your own fragrant and flavorful mixture!
For the Streusel Topping
- Unsalted butter, softened
- Granulated Sugar
- Flour
For the Vanilla Glaze
- Powdered sugar
- Whole milk
- Vanilla extract

- Silicone Donut Molds — These flexible donut pans make it super easy to remove the finished donut. They just pop right out of the non-stick pans!
- Non-slip mixing bowls
- Wire Cooling rack
- Large piping bag— This makes it easy and neat to add your batter to the pan, without spills or drips.
Can You Use Frozen Blueberries?
Yes, you can use frozen blueberries for this recipe. However, I recommend allowing them to thaw first, to soften. This makes the blueberries easier to puree in your blender. Otherwise you may end up with bigger chunks of berries than you’d like. Trying to chop fruit that is frozen solid could also damage your appliance blades.
If you know you’re going to be using frozen blueberries, try to plan ahead and allow yourself enough time for thawing.
What Can I Use Instead of Buttermilk?
The acidity of buttermilk helps create a lighter, fluffier cake. (And our donuts are cake donuts).
However, if you don’t have any buttermilk on hand, you can make your own substitute using a two simple kitchen ingredients:
- 1 cup regular milk
- 1 Tablespoon lemon juice
- OR 1 Tablespoon white vinegar
Stir milk and lemon juice (or vinegar) together until it starts to curdle just slightly. Add to your recipe when you would add the buttermilk.
How to Make Apple Blueberry Donuts
To save time, make the glaze and streusel while the donuts bake and cool. Then you can put everything together quickly and get to the good part…eating them!
1. Bake the Donuts
Preheat oven to 350 degrees and coat your donut pan with non-stick cooking spray or baking spray.
Puree the blueberries using either a blender or food processor.
In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and apple pie spice.
In a separate large mixing bowl, whisk together the eggs, sugar, buttermilk, melted butter and vanilla extract.
Slowly pour the dry ingredients into bowl of wet ingredients, stirring as you go, until combined. Fold in the blueberry puree.
Scoop the batter into your prepared pan.
TIP: Using a piping bag for the batter helps make this step super easy and avoids drips on the pan (that may scorch in the oven).
Bake for 11-13 minutes, or until the donuts start to turn a light golden brown color
Remove from oven. Once donuts are cool enough to handle safely, pop them out of the pan and onto a wire rack to finish cooling.
2. Make the Streusel Topping
Combine streusel ingredients in a mixing bowl. Use your (clean) hands to work this mixture until it forms a coarse crumble consistency. Set aside.
3. Make the Vanilla Glaze
Whisk together glaze ingredients in a mixing bowl, until smooth.
4. Put it All Together
Once donuts are cool, dip the top half of each one into the glaze and place them glaze-side-up on the wire rack.
TIP: Place a cookie sheet beneath the wire rack to catch any icing that drips.
While the glaze is still wet, sprinkle donuts with streusel. Allow to set, then enjoy.
Can You Use a Muffin Tin to Make Doughnuts?
Craving delicious homemade donuts? Don’t have a donut pan? No worries!
You can use a muffin tin to make your donuts instead!
All you need to do is make a ball with tin foil and place in the middle of each muffin cup. Pour or pipe your donut batter into the cup, surrounding the foil ball. (A piping bag or zip-top bag with the corner cut off can make this step easier).
Bake for 8-10 minutes at 350°F and check for doneness.
Can You Make this Recipe Gluten Free?
To make these baked blueberry donuts gluten free, simple swap the regular all-purpose flour with gluten-free flour. This applies to both the doughnuts themselves and the streusel topping.
It’s always a good idea to check the labels on the rest of your ingredients too, just to be safe.

Apple Blueberry Donuts
Equipment
- 1 disposable piping bag
Ingredients
- 1 ½ cup flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¾ cup light brown sugar packed
- 2 eggs large
- ¾ cup buttermilk
- 3 Tablespoons unsalted butter melted
- 1 cup Pureed Blueberries or fresh blueberries, pureed
- 1 teaspoon vanilla extract
- 1 teaspoon apple pie spice
For the Streusel Topping
- 12 Tablespoon unsalted butter softened
- ⅔ cup sugar
- 1 ½ cup flour
For the Vanilla Glaze
- 1 cup powdered sugar
- 2-3 Tablespoons whole milk
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350°F and coat donut pan with non-stick spray.
- Puree blueberries and set aside.
- Whisk together the flour, baking powder, baking soda, and apple pie spice.
- In a separate bowl, whisk together the eggs, sugar, buttermilk, melted butter and vanilla.
- Slowly pour dry ingredients into bowl of wet ingredients, mixing until just combined.
- Fold in the pureed blueberries.
- Pour or pipe donut batter into your prepared pan. Bake for 11-13 minutes or until a light golden brown on the outside.
- Remove from oven. Once cool enough to handle, pop donuts out of pan and onto a wire cooling rack.
For the Streusel Topping
- Add streusel ingredients to a medium mixing bowl. Use clean hands to work the mixture together into a crumble.
For the Vanilla Glaze
- In a clean mixing bowl, whisk together glaze ingredients until smooth.
- Dip the top of each donut in glaze and place back on the wire rack, glaze side up.
- Sprinkle each donut with streusel topping.
