Mini Guava Cheesecake Bites

There’s not much better than a slice of homemade cheesecake with a buttery graham cracker crust! We’ve taken all that deliciousness and rolled it up into a flavor-packed bite-sized treat.

These mini cheesecake bites taste like a total splurge, but they’re actually a wholesome snack that’s a good source of calcium and packed with protein. Plus, theย recipe is superย easy to make! It’s a win-win!

Picture this: creamy guava cheesecake wrapped in a crunchy layer of graham cracker crumbs. Every bite is the perfect ratio of filling to crust! And if guava isn’t your thing, you can easily customize this recipe with your favorite fruit jam.

Ingredients

  • 1 cup Greek yogurt
  • 8oz cream cheese
  • 1/2 cup guava paste or jamย (may substitute with any fruit jam you prefer)
  • 1/4 cup honey
  • 1TB lemon juice
  • 1 cup crushed graham crackers

Instructions

  1. Addย cream cheese, Greek Yogurt,ย honey, and lemon juiceย toย aย large bowl and mixย until smooth. (A hand mixer or stand mixer will both do the job perfectly!)
  2. Add guava paste and mix untilย the cheesecake batter is a beautiful shade of pink with small flecks of jam spread throughout. Allow batter to set in freezer until solid enough to form into balls (1-2 hours).
  3. Use a small scoop to form cheesecake batter into 1″ balls (yields about two dozen). Set individual cheesecake bites on a wire rack.
  4. To add the “crust,”ย have the graham cracker crumbs ready in a small bowl, as well as another small bowl of water. Dip each frozen cheesecake bite quickly in the cold water and then roll in graham cracker crumbs to coat.
