Easy, “No Bake” Tropical Fruit Cheesecake Bites

Our family loves to enjoy a sweet snack together after dinner and lucky for us, my husband is an amazing cook who loves to create new recipes for us to try!

Combine wholesome Yoplait® Greek Yogurt with smooth cream cheese, tangy tropical fruit flavors, and a crunchy graham cracker crust, and you've got a sweet snack or dessert you can feel good about eating and sharing with your family! #adOn a recent trip to Walmart, the hubby had a spark of inspiration for a new recipe: Tropical Fruit Cheesecake Bites. In our stroll through the dairy aisle, we saw these Yoplait® Greek 100 Yogurt single serving containers—the perfect way to make a better-for-you cheesecake!

I was pleasantly surprised to see that one single serving container of Yoplait® Greek 100 Yogurt contains 14 grams of protein and 15% of your daily calcium needs. Wow! Combine that with smooth cream cheese, tangy tropical fruit flavors, and a crunchy graham cracker crust, and you’ve got a sweet snack you can feel good about eating and giving to your family.

The best part: kids think they’re getting dessert, but YOU know they’re getting a wholesome snack that’s a good source of calcium and packed with protein. Plus, the recipe is super easy to make! It’s a win-win!

Here’s what you need:

  • 1 container Yoplait® Greek 100 Yogurt, Plain
  • 1 8oz bar of cream cheese
  • 1/2 cup guava paste or jam (may substitute with any fruit jam you prefer)
  • 1/4 cup honey
  • 1TB lemon juice
  • 1 cup crushed graham crackers

STEP ONE: Add cream cheese, Yoplait® Greek 100 Yogurt, honey, and lemon juice to a large bowl and mix until smooth. (A hand mixer or stand mixer will both do the job perfectly!)

STEP TWO: Add guava paste and mix until the cheesecake batter is a beautiful shade of pink with small flecks of jam spread throughout. Allow batter to set in freezer until solid enough to form into balls (1-2 hours).

STEP THREE: Use a small scoop to form cheesecake batter into 1″ balls (yields about two dozen). Set individual cheesecake bites on a wire rack.

STEP FOUR: To add the “crust,” have the crushed graham crackers ready in a small bowl, as well as another small bowl of water. Dip each frozen cheesecake bite quickly in the cold water and then roll in graham cracker crumbs to coat.

Your cheesecake bites are ready to eat immediately, or you may freeze and save for later — though I’ll bet you’ll want to taste-test a few right away!
