These tasty Salmon Cucumber Bites are a breeze to assemble, combining crisp cucumber, creamy feta, and savory smoked salmon for an elegant party appetizer or light snack.

Cucumber Smoked Salmon Bites
These Cucumber Salmon Bites are a delightful appetizer that perfectly balances fresh flavors and fun textures.
Crisp cucumber slices provide a refreshing base that is then topped with creamy, salty feta cheese and rich, smoky salmon. A sprinkle of Everything Bagel seasoning adds a delightful crunch and an aromatic blend of sesame seeds, garlic, and onion.
This easy-to-assemble recipe is ideal for parties, brunches, or a light, healthy snack. Bonus: this recipe is gluten-free, low calorie, low carb and keto friendly! It’s one of my favorite new recipes and easy salmon appetizers!

- 1 large cucumber
- 1/4 cup feta cheese
- 4-6 ounces cold-smoked salmon
- 1 teaspoon Everything Bagel Seasoning
- 1 Tablespoon fresh dill

Instructions
- Prep: First, prep your ingredients by cutting the cucumber into about 20 slices. Chop the dill, if needed. Cut the salmon into 20 evenly sized strips that you can fold and half and will fit on top of the cucumbers. If there is any excess moisture on either the cucumbers or salmon, gently soak it up by patting with paper towels.
- Arrange: Place the cucumber slices in a single layer on a serving platter or baking sheet.
- Layer: Top each cucumber with a pinch of feta cheese and a piece of smoked salmon.
- Garnish: Sprinkle with with seasoning and top with a sprig of fresh dill.
Prep Tips
- Cheese – If you don’t have feta cheese on hand, cream cheese can be used as a substitute.
- Cucumbers – When I have fresh cucumbers in my garden, that is always my preference! However, when I have to buy them at the grocery store, I look for English cucumbers because they have a thinner, less waxy peel.
- Herbs – Feel free to use your favorite fresh herbs in this recipe! Fresh dill is one of my favorites, but free parsley, basil, and chives would also work well. Other simple garnish ideas include lemon zest and capers.
- Storage – Keep any leftovers in an airtight container in the fridge for 1-2 days.
