I’ve got a thing for French toastย โ it’s my absolute favorite breakfast! My girls love it too, so you could say that this is a family favorite.
And what’s better than regular French toast??
Pumpkin French toast, that’s what!!
If you’re a pumpkin fanatic (like me), then this pumpkin pie French toast recipe will be right up your alley! It’s such an easy and yummy fall breakfast, dessert, snack, breakfast for dinner…you get the idea!
Here’s the breakdown: warm, fluffy bread soaked with pumpkin egg custard, a touch of butter melting into each bite, and drizzled with sweet maple syrup.
Now, you might be wondering why we cut our pumpkin French toast into strips. Couldn’t we just leave the bread slices whole?
Answer: Yes!! You can totally leave the bread in full slices and this pumpkin spice French toast will taste just as amazing…promise! We make pumpkin French toast sticks because my kids like to pick each piece up and dunk them into a ramekin of syrup. Super easy finger food for little hands!
Ingredients
- 6 Slices Texas Toast (or similar thick bread)
- 3 large eggs
- 1/2 cup milk
- 3/4 cup pumpkin puree
- 1 tsp. pumpkin pie spice

Instructions
- Add eggs, milk, pumpkin, and pumpkin pie spice to a large mixing bowl. Whisk together until well combined.
- Cut each slice of bread into 4 strips.
- Dip each bread stick into the pumpkin egg mixture and turn until the entire bread surface is fully coated.
- In a skillet over medium heat, spray or coat with butter, and cook the French toast sticks for 3-4 minutes per side. When both sides are a rich golden brown, the French toast sticks should be cooked through.

Prep Tips
- Bread – We used Texas toast, but you can use any type of thick sliced white bread.ย My husband always says: the cheaper the bread, the better the French toast! You can also use day-old or slightly stale bread because it holds up well when soaked in the batter.
- Serving – Remove from pan and sprinkle with powdered sugar or cinnamon sugar. We also serve with warm syrup for dipping. Enjoy while still warm as a festive fall breakfast or dessert!
- Storage – If you happen to have any leftovers, keep in an airtight container in the fridge for 1-2 days. You can reheat on a baking sheet in the oven or toss with butter for a couple minutes in a hot skillet.
