It may be a “winter cocktail”, but this Jack Frost Drink is all tropical when it comes to flavor! Sweet pineapple and smooth coconut rum create a vacation for your taste buds…and the coconut flakes look like snow!

Jack Frost Winter Cocktail

This Jack Frost Cocktail is the perfect winter or holiday cocktail to try this year! With just five simple ingredients and an optional sixth one, you’ll find that this recipe comes together so fast!

While the blend of coconut and pineapple might have you daydreaming of coconut trees and sandy beaches, this cocktail has a festive look that fits right in on any holiday table. I especially love how the rim looks like it is coated in fluffy white snow!

What Does it Taste Like?

Flavor-wise, this Jack Frost Cocktail reminds me of a piña colada — because it is made with similar ingredients. Pineapple, coconut cream, and rum are all key ingredients in both this drink and a traditional piña colada. However, it is the addition of Blue Curaçao which gives this drink its signature icy color, and adds a hint of citrus. And of course the coconut rims add something special too!

Jack Frost Cocktail Ingredients

  • 1/2 cup Coconut rum — Such as Malibu, but you can also use light rum if that’s what you have on hand.
  • 3/4 cup Pineapple juice
  • 1/2 cup Blue Curacao
  • Edible Glitter (optional)
  • Coconut flakes — Or shredded coconut
  • Cream of coconut — Or coconut milk (but be sure to shake well to get all the creamy part, as coconut milk separates in the can)

Bartender’s Tools Used

  • Cocktail shaker
  • Cocktail glass or champagne coupe

What Makes this Recipe Special

Searching for “Jack Frost Drink” on Google will turn up a lot of results. They all look the same: a frosty bright blue drink with the rim coated in snowy coconut flakes. However, it’s what you can’t see that makes this version of the classic winter cocktail unique!

Usually vodka is the liquor of choice for this drink, but we switched ours to coconut rum (such as Malibu). I mean, with pineapple juice and coconut flavors, rum is the obvious choice to this former bartender!

We also skipped the blender to make this an easy drink to whip up…and easy to clean up too! There’s nothing less fun than cleaning the blender at the end of the night!

How to Prepare the Glasses

One of the most striking features about this drink is the coconut-rimmed glass, which looks like snow. Here’s how to get that effect:

  • Pour a thin layer of corn syrup or light corn syrup in a shallow plate, so that it is at least 1/4″ deep. You can also use the coconut cream for this step, but corn syrup is a bit stickier.
  • On another small dish, add a layer of coconut flakes.
  • Hold your glass by the stem and flip so that it is upside down. Dip the rim first in the corn syrup, allow any excess to drip off, then dip the still-wet rim in the coconut flakes.
  • Allow the glass to dry while you mix your drink.

When it comes to choosing the type of glassware, you really can use anything! We found it looked fantastic in wine glasses, but if you can use regular cocktail glasses to reduce the chance of spills. A martini glass would also look stunning!

Instructions

Prepare glassware with coconut flake rim, as described above.

Combine pineapple juice, rum, blue curaçao, and a splash of coconut cream in a cocktail shaker with ice. If using edible glitter or cake shimmer, add now.

Give the shaker a couple vigorous shakes to combine and chill ingredients. Be careful not to over-shake, as this will cause the drink to become watered down.

Strain into your prepared glasses, with or without ice (up to you!)

How to Make a Pitcher

This recipe makes two servings. If you’d like to make for a crowd, you can whip up a pitcher!

To do so, double or triple the recipe amounts (depending on the size of your pitcher).

Stir together in the pitcher, without ice.

When ready to serve, pour over prepared glassware filled with ice.

Non-Alcoholic Version

The original recipe is intended for readers 21+ — However, this drink is super easy to make into a mocktail that the whole family can enjoy!

  1. Omit the rum.
  2. Use Blue Curacao Syrup (which is non-alcoholic) instead of Blue Curacao liqueur.
  3. Mix all ingredients and pour into ice-filled glass, leaving an inch at the top.
  4. Top with lemon-lime soda for a little sparkle.

Ingredients

  • ½ cup Coconut rum
